What are the differences between long grain rice and Basmatti rice?

I have heard Basmatti is low Gi, how is this so?

  1. Actually Basmati is a different type of long grain rice.

    It is known for it's fragrance and delicate flavour.

    According to the Canadian Diabetes Association, basmati rice has a Medium glycemic index (GI) of between 56 and 69, thus making it more suitable for diabetics as compared to certain other grains and products made from white flour.

The first fellow is right and so is the second, I to am a former chef, basmati is grown mainly in India and Pakistan along in the Ganges and foothills of the Himalayas, its processed and aged up to 6 month to develop its nutty flavour, there is brown basmati as well and the Tex-mati is a basmati hybrid grown in the US.

    Long grain rice is mostly of the Carolina breed, and is process similarly to basamti but not aged and like the one person said Uncle Ben's and some other are par cooked to enhance there vitamins and shorten cooking time, brown rice is not processed and can take 3 time longer to cook than long grain and basmati.

    You should always wash the starch off of basmati and soak it for 15-20 minutes drain and cook only until the water appears gone remove it form the heat to absorb the water and then fluff, I do the same for long grain I like some texture.
