Vietnamese foods are simply prepared and flavorful.  They combine the flavors of sweet and salty, sour and bitter.  In their cooking they utilize very little meat and depend on veges and seasonings to get them thru.  They make amazing broths using fish sauce, soy, lemon grass, kafir lime leaves, garlic, chli paste, etc.  They also use dehydrated shrimp to flavor broths and dishes. They utilize eggs and make wonderful vegetable, meat, and sprout omlets that can be enjoyed in lettuce wraps with shredded carrots, sprouts, mint and cilantro.  There are restaurants that combine foods from the french culture as well as vietnamese.  Dishes are usually accompanied by steamed rice, and soups contain noodles, either rice or egg or buckwheat (udon).  And there's more....

Vietnamese food is great! It uses a lot of fresh ingredients that give most everything a light yet complex taste. Nothing too heavy. My favorite vietnamese food is phở. It's a clear rice noodle soup with various spices and meat then you mix in basil leaves, sriracha and hoisin sauce. I could go on and on listing great dishes! Most anything with vermicelli rice noodles is great, especially spring/summer rolls! I go to a Vietnamese grocery a lot...there you will find beef, pork and seafood, noodles and many sauces, such as soy and fish sauce...lots of vegetables and fruits, bok choy, bitter gourd, eggplant, carrot, a cilantro that is unique, garlic, onion, and the fruits are all tropical...with durian as the oddest...stinky fruit! And 50 and 100 pound bags of rice!
