  1. its used to bind and hold mixtures together! it basically acts like an edible glue!


  2. They hold the biscuits together so they don't crumble. Otherwise, you would have baked crumbs.

  3. egg yolk in biscuit dough helps to bind the dough so  it stay together,as it does when added to minced or ground meat for a loaf or cutlets but let us not forget it adds a richness & taste all it's own .

    there are many yolk free recipes ,good in their own right & excellent for weight watchers & the  healt conscious .

  4. Have been making biscuits for more than 30 years and have never used an egg yolk...so I'd have to say it has no function!!!

    2 cups self rising flour

    3 tablespoons shortening

    pinch of salt

    1 cup buttermilk

    sift flour and salt together...add shortening and using a fork or a pastry cutter..combine till coarse and crumbly..add buttermilk...combine and pour out on floured surface...need 2 or three times....with your hands press dough out to about an 1/2 inch thick...using a biscuit cutter..cut out your biscuits and place on a non greased pan...cook in 400 degree oven for 10-12minutes!!!....if all you have is all purpose flour...add 2 tablespoons of baking powder!!!
