What are the health benefits of eating okra?

It happens to be my favorite vegetable (yes I know technically it is a fruit). I normally eat them lightly breaded with cornmeal and fried in a pan for a minute or two. (Not deep fried, just long enough to get the cornmeal to stick.)

I'm also curious what would be the healthiest way to prepare okra?

    It is healthiest when steamed. (But tastiest when fried!)

  6. I love okra too--my family roots are southern, so okra to me is as good as fried green tomatoes.  Now I roll it in cornmeal and bake it on a baking sheet sprayed with pam so it's not as greasy.  It's good for Vitamin A, calcium and other nutrients.  Check this out:
