  1. In the 60's my mom really thrilled our family with "tuna casserole" which was tuna mixed with mac & cheese with peas mixed in and crushed potato chips on top (do potato chips constitute a vegetable...LOL).  

    In the 70's, we expanded into canned salmon with canned peas & carrots in a white sauce on toast points, and a myriad of crockpot beef stews with potatoes, carrots, onion & "Lipton Onion Soup Mix".

    In the 80's, we were "healthier" by staying away from beef a bit more & heating the oven once by throwing in chicken pieces with BBQ sauce on them, baked potatoes, canned biscuits, and serving them with a quick lettuce/tomato/cucumber salad.


  2. Meat Loaf, broccoli, rice-a-roni, and a salad. Spaghetti, meatballs, zuchinni, and salad. Most meals from that era did not contain 2 vegetables, unless they were canned mixed (such as peas and carrots). I grew up in this time and my mom never served more than one, unless it was a salad. Pot roast, carrots, potatos, asparagus. Fruit would be used more instead of a second veggie.
