It really depends on where in Mexico. In the central parts, tilapia, and catfish are more or less popular and available in most supermarkets. Trout is also very popular, and served at many restaurants.

I would say trout. There are many farms all around Mexico.

I know that in Sonora and Sinaloa that all the lakes held back by dams are loaded with bass. Sport fishing is very popular in these lakes.
