On racing sail boats you have the skipper also known as captain, the helmsman (who steers) and possibly a separate main sheet operator, the tactician who plans the strategy of how moves are executed and when, the navigator who charts the course, the jib handlers and grinders of wenches, a lookout or foredecker to straighten out lines and sails that foul and look for wind shifts, and a sewer position, which is someone who stands in the companion way and helps hand up or down changes of sails and folds them up, and hands up other necessary articles like gloves, glasses, hats, but mostly beer!  It really depends on the size of the ship.  On every boat I've raced on over 30 feet someone is also the fixer who functions as a capenter, electrician, plumber who does general repairs as we go along.  Generally you need one person per ten feet of boat to make weigh.  People double up in their functions.
