What are the names of top notch chef knives and how much would a set cost?

  1. Global are pretty nice knives.  I have a set of them and they maintain their edge very well. I've had them for about 6 years now and absolutely love them.  Here's a website with the "top picked" knives as well. I hope this helps


  2. Go to www.potterybarn.com .   I buy all my knifes there because they have great quality brands and styles of blades.  Don't worry about which brand at this store, they carry top of the line cutlery.

  3. just about every chef I know uses fairly nice Japanese knives, Global is a good choice, they are very well balanced, hold their edge forever, lightweight, and comfortable. The global will run about $100-$200 per knife. Shun is another popular choice, with higher quality steel and cost about $200-$300. TRUELY top notch Japanese knives typically run in the thousands and ten thousands, and usually require a trip to Osaka.

    Many chefs don't like German or European knives because they are very heavy, and uncomfortable after hours of use.

    If you are going to get a set, I would recommend a 6-8" Santoku knife, a 10-12" French style knife, a good paring knife, a 10-12" serrated knife with a point, and a fillet or boning knife. I also have a cheap Chinese cleaver in my knife roll for heavy duty chopping.
