For Hamburg, do the 'Speicherstadt bei Nacht', this is probably the best harbor tour you can get, they might not speak english, but you will still have a blast, bring a light sesitive film for the camera, since the flash won't do too much.

The Rickmer Rickmers at the old port is a pretty nice great ship to see.

But, the ultimum is the 'Fischmarkt' at the harbor on Sunday mornings, early mornings! It starts at 5 am and everything is done by 8, or 9 am. Live music and the crowd from the clubs, which close just around 5 am, keeps the party up and going. This is THE must for Hamburg.
