  1. Pros are that the vegetable dyes are nontoxic and biodegradable. The cons however are that these dyes drive up the cost of vegetables and means less land is  used for growing food.


  2. I think the term "vegetable dye" can be misleading.  If you are refering to plant based dyes, many of these are extremely toxic, and some are carcinogens.  The largest drawback is the economics that can not be overcome in many cases.

    The pros are that some are economic and less toxic (non-toxic is a term with no meaning) and are used everyday.  Soy based ink are widely used in printing.

    The bottom line is that no matter where you get dyes, they are all chemicals and they have to be evaluated individually.  Being grown does not make "safer" (another word with no meaning).
