You would have to look and see which Australian/Chinese airlines fly from where you are. I would have suggested Oasis since they used to fly from Canada, London and Australia but unfortunately they went bust. Very disappointing as I've never had better service or received such a cheap ticket!

Anyway, I would suggest Cathay Pacific.

They're based in Hong Kong and fly to pretty much everywhere and the tickets are are quite cheap. They were Oasis's main rival when they were around so I'm sure you'll have a fantastic trip! Have fun and enjoy Hong Kong; it's an amazing city...

EDIT:

I've just looked at the website and you can probably expect to pay about  AU$2,133.47 for a Economy round-way ticket which seems a little steep to me but it really depends if you're buying a one way ticket, a round trip and the time of year you travel is a big deciding factor.
