  1. First, to keep your hand from warming the glass and altering the flavor of the wine.

    Second...and this is my own opinion and not supported by fact, but I believe it helps when swirling your glass. If case you aren't familiar with this practice you should occasionally swirl your wine or beer to release aroma and enhance enjoyment of the flavor.

Not only does it give them elegance, but they're also somewhat functional.  White wine should be served in a slender glass, and held by the stem to keep your hand from warming it (since white wine is served chilled).  Red wine is better when oxygen gets to it, so should be served in a round, open glass so that it can breathe.  You can hold the red wine glass by the bowl part (cupping it in your hand), since it is served at room temperature.  

  5. For holding.so that you can't put  mark or mess up the bowl.

  7. wine is served at particular temperatures, so you are supposed to hold the glass by the stem as to not affect the temperature of the wine in the bowl.

    This is especially important with white wines, which are supposed to be chilled
