Right, smaller supermarkets will either have supermarché written below their names, really small shops which have all essentials will be called épicerie and the big places like Auchan will probably be called hypermarché. Hopefully, that's a help...But may I suggest you try the smaller shops you find in some of the back streets? They can be expensive but if you look in the right places, they have lovely stuff to try...and I think you truly find the French there..well..the Parisians...
