There are many.  What culture are you looking at in particular?  My favorite is the Quechuan idea that water is a portal or path to the spirit world.  Arthurian legends employ the same idea that if one walks in a river long enough they may find themselves in the fairy/mythical world.  Catholics have Holy Water and most Christian sects use water for baptism.  Water features in many Bible stories; Moses' is one example.  Still water is symbolic of inner harmony/tranquility in some New Age beliefs and is often used as a focus for meditation.  The beliefs regarding water have a lot to do with the local culture.  For example, sailors who travel the northern Atlantic and Pacific would likely describe ice as dangerous because of it's ability to crush boat hulls but the Quechuans make pilgrimages to sacred glacier capped mountains and spend the night on the glacier to be closer to the spirit world.  In desert regions, water is the most valuable resource while in rainforests it is perhaps less appreciated.  The Ganges is a very sacred place, a Hindu goddess, and bathing in her waters is purifying.  There are a lot of different ideas about water and what it represents.
