  1. Beef steak, dinuguan and embutido.

    Actually, I am a student in Northern California and I always go to this Pinoy place on days when they have beef steak (Monday), dinuguan (Wednesday) and embutido (Thursday).

  4. i am from aklan, a province in western visayas.

    please see below for some of our top recipes:

    1.  Inubarang Manok

    The Inubarang Manok is one of the dishes Aklan takes pride in. It is a hearty mix of native chicken and banana ubad, the core or pith of the banana plant (as ubod is to the coconut), flavored with pure coconut milk and seasoned with lemon grass (tanglad) ginger, garlic, onion and salt.

    ==>  this is my absolute favorite.  every time i go home (as i live here in manila), this is my request.  my homecoming is not complete without this.

    2.  Chicken Binakol

    Binakol is another Aklan chicken dish that is steamed together with its own tasty juice cooked over a flaming charcoal inside a bamboo. The process of this cooking makes the chicken absorb all aroma of the natural way of cooking and provides a juicy texture and rich taste that lingers on in the mouth for quite a while after the whole eating is done.

    ==>  another favorite of mine.  my "balikbayan" cousins and relatives love this.  in a cooking show once held here in manila by aklan chefs, guests marveled at how we prepared this dish.

    3.  Tinumkan

    composed of freshwater crab or shrimp that are cooked with coconut and are wrapped in gabi leaves)

    do you know that we also make "kinilaw" from jellyfish?  jellyfish is called "buroe" in aklan.  it makes delicious "kilawin."

    for dessert, i love "eangkoga," the aklan-version of guinataan but ours is more delicious (for me, no offense meant).

Oysters served any possible way you can think of.  I live in VA in a small town where we have our local Oyster Festival each year.  Many many years ago we were known for our oysters but now that the bay has been polluted and because of over harvesting, we're suffering.  But we still have not only the best oysters you can find but some of the best seafood!!!
