well u can do lots! u could check the toxic level of the water (as in measure the amount of heavy metals, grease etc in the water) or u could check the amount of nutrients present in the water like sodium, potassium, calcium etc...  which lead to eutrophicaton or u could also check the suspended particles and their size, conductivity, ph, volatile matter, etc present in the water.
