As for planning your first concern is where you are going to start.  If you are not starting on newly farmed land or land that hasn't been farmed for several years, it may take you a few years to be fully organic.  Next plan where to get your seed and/or plants that are organic to start with.  Then on to fertilizer source, insect control, weed control, and where to market your product.  Start by reading the sources that I pointed out in your other question.
