What are the ways of preserving zuccini?

I am still a fairly new gardener. We've got quite a few zuccini coming on. I'd like to know your tried and true methods of preserving it. Thanks! Also am interested in the whys of why you should do it this way.

  1. zucchini plants are short lived. But the fruit can be blanched and frozen. By cutting up the zucchini in normal serving sizes and boiling a large pot of water. Boil the water and put the zucchini in a submersible strainer. Put the zucchini in the strainer. Submerse the the zucchini for 2 minutes in the boil water and strain. Put into zip lock bags and freeze. This is the only way you can preserve without getting into complicated jarring them.

       Blanching is using heat to denature the enzymes that naturally spoil the fruit.  Make sure you cut the zucchini into small thin slices and this will make the blanching more effective. If you freeze without doing the blanching the zucchini will rot.
