What are these chinese vegetables?

Whenever I order chinese takeout I always order shrimp with chinese vegetables. It occured to me that I don't even know what these vegetables are. Besides the fancy cut carrots and snap peas or snow peas (I don't know the difference), there are these big pieces of clear white things with ridges that remind me of big slices of onion or cabbage, then these round things that have a really wierd texture, they are kind of white clear too. And these yellowish white long rectangle things (I think these are called bamboo chutes, but I don't know why I think that). Does anyone know what these are

Maybe Bok Choy? It looks sort of like celery.

The round white pieces are water chestnuts and (you were right) the yellowish long pieces are bamboo shoots. Depending on the restaurant some places will use fresh, canned or reconstituted ones.

Snap peas are fat and have big peas in their pods. Snow peas are flat and have tiny little peas in their pods.

Most likely the vegetables in the dish are a mix of carrot, Chinese Peking (Napa) cabbage, rectangular pieces of bamboo shoot, slices of gluten (vegetarian mock meat made from rice flour). These may be cut into any fancy shapes. There is a great variety of Chinese vegetables that can be used in many tasty recipes. Buy a Chinese recipe book and experiment. Most Chinese grocery shops usually supply a variety of these ingredients and sauces. Happy eating.

the round white clear things are called "water chesnuts" your right the rectangle ones are called "bamboo-shoots" I'm not sure of what you mean by the first description you said, I think that it would've been better if you took a picture of it because it would look more familiar to me. :D
