What are these two vegetables in Chinese Lo Mein called?

I love vegetable Lo Mein but there's one veg inside that I don't like and I can't say no ___ because I don't know what it's called and I haven't found it online lol.

It's white, sorta yellowish, round and flat on both sides, and very very crunchy.

Also, one time they didn't put that veg inside and instead had a different one and I'd like to know what that's called too cause I love it.

It's same color, white sorta yellowish, flat on both sides but not round. It's kinda squarish but misshaped with wholes in it like swiss cheese. And it tastes pretty much like nothing.

Please help!

  1. the white round one is called water chesnuts. They come in a can with brine. They're not flat. You have to slice them, they're actually kind of brownish and you peel them (unless they're pre-peeled) and slice them in coin shapes. They stay crunchy.

the second one is...lotus root?? Not sure. From the description--it must be. It's the only vegetable with that color and texture, but hmmmm....it could be because the roots are big and they have to be cut into pieces They are loooong and brown, and again--you have to peel them. The canned ones taste like nothing, and come to think of it, are sort of small and square. The fresh ones look like a sweet potato on steroids and have a mild, sweet taste sort of like...sweet potato

bamboo shoots are yellowish and squishy, like a canned mushroom

  2. 1.  Bamboo shoots.  (are crunchy)!!!

2..  Tofu  is the white squidgy stuffy

maybe Lotus root but not sure.

  3. The one with holes in it may be lotus root.

  4. Definitely water chestnuts and lotus root:
