What are those round circular things found in chinese cooking?

i think they are white, because i think they get coloured by what sauce they are in, they are round circular and really crunchy.

That is water chestnuts.  I love them but they are very bland eaten without some kind of sauce.  You can buy them fresh in some Chinese supermarkets, but more often they are sold tinned in brine.
