I was just wondering that myself.  I was browsing around here and saw someone asking about what to do with the frozen spinach that is taking up too much space in their freezer, and that reminded me that I've got some too.  I started think about about what else we've got on hand that could go with it, and I've narrowed it down to these two options:

A crustless quiche with spinach, eggs, cheddar, feta, scallions, sauteed red peppers, and some seasonings;

or

A one-pan stove-top type dish that has no name but that I make with leftovers sometimes; it consists of a layer of spinach sauteed with butter and garlic, a layer of leftover spaghetti squash, some tomato sauce, ricotta cheese, mozzarella cheese, and some sliced Boca vegetarian sausage, all simmered and bubbly.

It's early afternoon here, so I won't make the final decision for a few more hours.  They're both sounding pretty good at the moment though.

I am on my own tonight, i was just going to fet a couple of chinese dishes from M and S but it actually worked out cheaper to buy their chinese banquet for 2. :-/  My husband says i eat like a bird (dont worry he thinks i drink like a fish :-) would not be happy at my purchase, going to cook it in time for this evenings X Factor.

Waaah! I don't know! It's been like an assembly line of food rolling out of the kitchen and I'm tired of cooking day in and day out. There's pizza dough in the freezer; perhaps a calzone.
