  1. Ribeye steak (marinated), fresh tossed salad & baked potatoes. Jello shots for dessert. My husband has to work, so we are winging it this year.

That sounds good!  We are having both sides of the family over (about 20 people) and are combining it with my 12 year old son's bday.  We are ordering in chicken, and I am making all the sides to go along with it.  These include deviled eggs (made from the Easter eggs we colored yesterday), mashed potatoes and gravy, stuffing, corn, homemade rolls, hash brown casserole, cheese and carrots.  For dessert, I ordered a huge DQ ice cream cake with a picture of a king on it for my son.

We actually had our Easter dinner last night.  Pork spare ribs, honey mustard chicken, ranch potatoes, cabbage and my famous baked beans.  My daughter claimed that it was the best meal she had ever had and even though there is a ban on taking tupperware type things out of the house, she managed to talk me into it and has leftovers for herself.

  4. Ham, ranch potato bake, green bean casserole(I'm addicted to the stuff) dinner rolls, and for dessert homemade lemon cheesecake. Happy Easter everyone!!!!

  6. Turkey dinner this year.  We always have ham because once we had turkey and it snowed on Easter.  But, the other day we got a bunch of snow dumped on us and I said what the h**l...  we will have turkey.  So, it will be just like a Thanksgiving dinner.

  7. I am doing turkey because one guest doesn't like ham .I am doing boiled potatoes that are boiled with three roasted garlic cloves and carrots.there will be green beans as well.Red seedless grapes as appetizer and then after dinner ...EASTER CANDY !!! Happy Easter everyone.

  8. We made goose, wild rice and asparagus. We also had rolls, pecan pie and dutch apple pie.

My daughter asks me every year why don't I make rabbit.  It is not easy to come by here in the Islands and when you do find it they want $15 a lb for it.  And coming from a place where we had rabbit regularly and it cost virtually nothing I can't bring myself to pay that much.  So this year I am making a Pavochon stuffed with Mofongo and serving it with a seasoned rice with pigeon peas and potato salad.  The Pavochon is a turkey seasoned the traditional way Puerto Ricans season their Lechon (roasted suckling pig)  it is super flavorful and juicy.  I have made Lechon before and it was great, but this is the first turkey.  It is in the oven now, and I am a bit nervous.

  13. We had ham, au gratin potatoes, and rolls.  I ate way too much so now I'm sitting on the couch just stuffed full.  My toddler refused to eat the ham and potatoes, so he had a pb&j sandwhich with peanuts and raisins.
