  1. Asian beef stir fry tonight:

    2 pounds beef or veal ( I use boneless veal sirloin)

    6 tablespoons soy sauce

    2 Tablespoons fresh curry powder*

    4 Tablespoons olive or other vegetable oil

    2 pounds sweet potatoes, peeled and cut into ½ inch cubes

    2 inches fresh ginger root, peeled and grated

    ½ half green or red chili, diced as small as you can (or to taste - depending on my diners, I sometimes replace this with a red or green bell pepper

    6 green onion, sliced into rings, white and green separated

    I can (14 ounces) coconut milk

    3 Tablespoons freshly squeezed lemon juice

    Salt to taste

    I cup fresh coriander leaves, chopped

    * This recipe can get a little spicy. The amount of spices used in this recipe produce what I consider a medium-hot result. Use your judgment, and adjust the spice quantities to suit your tastes.

    PREPARATION:

    Mix the soy sauce and curry in a mixing bowl.  

    Add the meat to the marinade, and mix. If you have the time and facilities, cover bowl, refrigerate and marinate to let the flavors blend for 2 - 3 hours.

    Warm the oil in a wide skillet or wok. When the oil is very hot, add the meat and brown for 2 - 3 minutes.

    Remove meat to separate dish or bowl  

    If required, add a little more oil to wok or skillet  

    Add the sweet potato, ginger, the chili and the white bottoms of the green onion. Cook for 5 minutes, stirring constantly.

    Add the coconut milk, cover and let simmer until the sweet potatoes are done, an additional 5 - 7 minutes.

    Add lemon juice, salt and meat. Cook for 2-3 minutes longer. Taste and correct seasoning if necessary.

    Remove from heat. Garnish with coriander leaves and remaining green onion.  

    Serve immediately

    placed one layer of tater tots on top

    baked for about 45 min

  4. I don't usually make a menu, but from what is in my fridge, it's going to look something like this

    leftover fried chicken and roasted potatoes

    pork chops, rice and callalou

    fish, mac and cheese

    stuffed eggplant and bake

    some sort of hamburger something- probably a baked hamburger sandwich- sorta like a beirock with out the cabbage.

    and hopefully more leftovers

    I could do a stir fry out of the leftover chicken or pork.

    Tuesday- Grilled chicken

    Wednesday- shepherd's pie

    Thursday- chicken and brocoli casserole

    Friday- Beef stew

  7. tonight frozen pizza because we have football and cheerleading practice for the kids.  tomorrow night we are going to have a pot of blackeyed peas, cornbread, and fried pork chops, thursday night we have practice again, so we will probly eat something like homemade cheeseburger mac.  Friday is payday so we will probly go out and get something, then saturday Ill probly do a cassarole for lunch so we can do leftovers for dinner so I can enjoy my off day, and then Sunday we will probly grill some chicken or burgers.

  9. Last night I grilled some Skinless Smoked Sausage - if you've never had it, try it! It  is awesome and 100X better!

    I am also making Shake and Bake pork chops for the hubby and making brown gravy to go with it.

    I was thinking about making taco's and burritos but I don't have any refried beans - WAH!

    Will be making Spaghetti with Meatballs with some garlic cheesy bread too- nummers!!  

  10. tonight is chicken breast sliced thin and marnaited in garlic chili sauce with a lil honey and ponsu stir fried with mixed veg on brown rice

  11. I cooked Chinese wine chicken soup,eat with white rice, it tasted good may be you can change the Chinese wine to red wine.

  12. Last night was ribeye steak, garlic toast, sauteed mushrooms...

    Tonight is out to the club for $ drink night and hot dogs

    Tomorrow is roast stuffed chicken, mashed potatoes, gravy...

    Not sure about Thursday.
