  1. Caribbean food:

    The food has a lot more flavor than most because we use a lot of fresh herbs as opposed to dried/packaged seasonings.

    A lot of the foods are cooked in coconut milk.

    In the Caribbean there are people from many Ethnic backgrounds living here so you get a taste of all of them and the thing is that while all of them taste good, you still miss the rich, flavorful taste of Caribbean cooking.

    My favorite would be:

    Roasted breadfruit (roasted on an open fireside) with crabs cooked in curry and coconut milk, stewed pork in coconut milk and pelau (meat, pref chicken, peas, rice,fresh seasonings, pumpkin all cooked together in coconut milk).


  2. IN LOUISIANA WE HAVE A DISH CALLED BOUDIN IT IS SO DELICOUS. YOU TAKE ALL THE PARTS OF A HOG (hearts and livers all that good stuff) THEN YOU STUFF IT IN THE LINING OF THE HOGS GUTS CALLED A CASING WITH RICE AND BOIL IT. ALSO WE LOVE CRAWFISH BISQUE, PICKLED PIG LIPS, FRIED PIG TAILS AND ALSO WE ENJOY HOG HEAD CHEESE. Tripe which is menudo, chitterlings, fried liver and gizzards, kidney stew, bar b qued deer, crawfish.

  3. I'm not Indian, but I love me some Indian food!  Hot, spicy, complex, bursting forth with flavor and can be healthy if prepared so.  Nothing like a good curry.  Try it if you haven't had it!

  4. well im half puerto rican so i love there food my favs are bacalou which is slated cured cod, lechon which is basically a raw ham thats cooked with a whole bunch of spices and seasons and arroz con gandules which is rice with pegion peas

    Cake:

    6 large eggs, separated

    2 cups granulated sugar

    2 cups all-purpose flour

    2 teaspoons baking powder

    1/2 cup whole milk

    1 teaspoon vanilla extract

    Cream topping:

    1 14-ounce can evaporated milk

    1 14-ounce can sweetened condensed milk

    1 cup heavy cream

    Icing:

    3 tablespoons water

    3/4 cup granulated sugar

    3 large egg whites

    1 ripe mango, peeled, seed removed, and thinly sliced

    1 ripe papaya, peeled, seeds removed, and thinly sliced

    To make the cake: Preheat the oven to 350 degrees F. Lightly grease and flour a 9 by 13-inch baking dish and set aside.

    In the bowl of a mixer, beat the egg whites on low speed until soft peaks form. Add the sugar gradually with the mixer running and peak to stiff peaks. Add the egg yolks 1 at a time, beating well after the addition of each.

    Sift together the flour and baking powder and add to the egg mixture, alternating with the milk. (Do this quickly so the batter does not lose volume.) Add the vanilla. Bake until golden, 25 minutes.

    To make the cream topping: In a blender, combine the evaporated milk, condensed milk, and heavy cream and blend on high speed.

    Remove the cake from the oven and while still warm, pour the cream mixture over it. Let sit and cool to room temperature. Cover and refrigerate until well chilled, at least 4 hours or overnight.

    To make the icing: Once the cake is completely chilled, in a saucepan combine the water and sugar. Bring to a boil. Reduce the heat and stir to dissolve the sugar. Cook until the mixture reaches the soft ball stage, 235 to 240 degrees F. Remove from the heat. In a medium bowl, beat the egg whites to soft peaks. While beating, add the hot syrup in a stream. Beat until all the syrup has been added, the mixture cools, and a glossy icing forms.

    To assemble: Remove the cake from the refrigerator and spread the icing evenly across the top. Arrange the mango and papaya slices over the top and serve.

  6. Thai because of the complex spicy flavors and elegant presentation. Drawback is a lot of dishes tend to be too sweet.

    Vietnamese, because it's inbetween Chinese and Thai. Fresh herbal complex flavors without the sugar sweet taste of Thai and greasiness of Chinese. Lots of soups and salads too.

    Greek, great blend of spices, and grilled meats. A lot healthier than italian and more fresh vegetables.

    Japanese because simple flavors. All dishes are made so you taste the subtle flavors of each ingredient. That's why traditional sushi is just fish on rice.

    Indian, for complex spices and baked flatbreads. Although one of the main drawbacks is heavy use of fried and buttered foods. Also they tend to overcook vegetables. Very stew based.

    Overall if any ethnic cuisine that can make good seafood.

  8. Probably hogshead cheese for a weird cajun food.

    I love my chicken gumbo! Roux base, chicken, smoked sausage, served on white rice with a side of potato salad.

    I also love shrimp and sausage jambalaya. Red gravy base, cook the shrimp, bell peppers, garlic down. Add the raw rice and water, cook untio rice is done. with French Bread and sweet iced tea.

  10. well i don't know if it is ethnic or not but I love Indian food it has wonderful flavors that I don't taste in any other food

    i start with bread either naan or roti it is flat bread i guess similar to a pita it is served warm i like the garlic and onion ones they give you some kind of dip also

    the main dishes i find delicious are saag which is a spinach based dish and you can get it with lamb or chicken also they have many curry dishes and use eggplant and lentils mostly even though i am not a vegetarian i eat the vegetarian dishes they are so good you don't even miss the meat

    indian food is nothing to look at though i must say it looks gross but tastes delicious

    mexican food is good also i really like chile rellanos and their chirozo queso which is a sausage and cheese dip

    other good food i think it is greek is fallafel , hummus, tabuoli

    dolmas sorry i can't spell these things

  11. Italian- pastas, chicken, veal, meatballs, eggplant parm., soups.   Chinese- Stirfrys with beef, chicken, pork or shrimp.  Mexican-  chilis relanious, enchalatas.  French-  beef stew.  Thai-  noodle dishes.  Greek- stuffed grape leaves.

    its basically rice, meat and spices wrapped in a grape leave and cooked in lemon juice its really good! =)]

  13. Indonesian!  For people who like thai food, I would recommend trying Indonesian.  It's very similar to thai food but it's better, hehe, and it's spicier!!!

  16. Jamacain Jerk Chicken from this place out here. The owners are all from the country so you know its "the real thing". They also add rice and beans to it..mmmmmmmmm so good!
