What brand of knives are good, knives used for cooking?

  1. We use Wusthoffs. They are NEVER put in the dishwasher. They are well-balanced and hold an edge very well. I steel them every few days or so, as they are used frequently. Get a wooden cutting board, preferably maple. Do not use glass or plastic cutting boards, as they dull the edge of the knives. Never use an electric sharpener on good knives.

    For a sharpener, I use a Smith sharpener that I got at Lowes for about $8. It sharpens knives and scissors. Does a good job with both. Only use the sharpener on the Wusthoff when the steel will not work on them.

    Cutting up things with good knives is a pleasure and much easier than with cheap knives. They last a lifetime.

  2. the main way you no quality knives is look at the handle if you see the metal go totally through the handle it means it is a balanced knife if metal just goes to tip of handle it is not good, and german knives are the best , i am a chef so trust me ok

  3. I use henkels.  I have had a set for over 6 years and I am very happy with them.  If you are just using them for home cooking you can get any good quality knives and they will last a long time if you take care of them properly.  only hand wash (no dishwasher) and keep them sharp.  

  4. I have gone through many knives over the years from very expensive to supermarket cheap. I am actually very picky about knives. I don't like J.A. Henckels knives, they are way to expensive, don't hold an edge well, are hard to sharpen and the the blades are too thick. I can't stand Farberware. I had a very rare set of Gerber kitchen knives that I loved but wore out. Recently I bought a set of Chicago Cutlery knives, I know usually very cheap, but they have come a long way. The current C.C. knives I have are 3 rivet, full blade through handle, very thin blade, high quality stainless and sharpen easy and hold hold an edge well. This is the best set of knives I've had in years and they didn't break the bank.

  5. Wusthoff-Trident or J.A. Henckels are equally the best available IMHO.  Sharp, hold an edge, dishwasher safe, and ergonomic.  Can also be found on sale if you watch for them.

  8. Kershaw-Shun, Demascus Steel. Some of the highest quality. They keep really sharp and look great.

    I'm pretty good with them but haven't cooked the knives yet - I usually cook with food!
