  1. Mornay Sauce

    2 tablespoons of butter

    2 Tablespoons flour

    1/2 cup cheese of choice

    11/2 cup milk.

melt butter over low heat...add flour and let cook for 1 min stirring constantly,,,slowly add milk...add cheese when hot..season to taste with S&P

  2. Maybe some english mustard or mustard seeds to spice it up and give it a kick.

Garlic and cheese is another good one. Just add some oregano to jazz it up. Never forget salt and pepper!

  3. You need flour.

To make a bechamel, you need to melt the butter, then add flour.  Stir a few minutes til smooth.  Add hot milk, whisking constantly.  Salt and white pepper are pretty common things to add.

You can add a little dry chicken base, a little dry mustard, or nutmeg and peas, You can add parmesean or another cheese after removing the sauce from the heat.  You can add red pepper flakes or ground red pepper.

  4. start by making a roux with equal parts butter and flour, stir on medium heat until dark blonde in color. Then add your milk slowly. Maybe temper it by taking a bit of roux in a seperate cup and adding room temperature milk to that. Continue to stir over medium heat until thickened. Add salt, pepper, & garlic powder to taste.

  5. Creamy Alfredo Sauce

    1- 8 ounces Cream Cheese

    3/4 Cup Fresh Grated Parmesean

    1/2 Cup Butter

    1/2 Cup Milk

Heat in a saucepan until smooth. Serve over your favorite pasta or use as a dipping sauce for toasted french bread. I've successfully substituted half-and-half or skim milk for the milk. And sometimes I add a little olive oil in place of some of the butter. This is so thick and creamy.

Credit for this recipe goes to my good friend Karen who's husband was in our wedding over 19 years ago. He was nice enough to stand in when one of the groomsmen couldn't attend and now he and my husband work together. Thanks Karen for this amazing recipe.

    Best of Luck!

  6. Red Pepper Flakes for hotness

    Garlic Powder for garlic-ky flavor?

  7. You can add some chicken broth or Dijon mustard. Nutmeg is really good with cream sauce. But first you have to make a roux. That's an equal mix of flour and fat. So mix equal parts of flour and butter and mix that together until it becomes a peanut butter color. Then add your cream and whatever else you want. You can add crushed red pepper flakes or cracked black pepper for a little spice, or maybe some lemon juice for a little tartness. Or when you're melting your butter, add some chopped shallots and/or garlic and cook it until lightly browned. Then add the flour, make your roux and add your liquids and seasonings. I hope this helps you make a great cream sauce for your dish. Happy cooking!
