  1. I have been looking for mint chocolate chips for forever, but I can't find them anymore.  I used to make these cookies a lot - I LOVE them!

    Deep Chocolate Mint Cookies

10 oz. pkg. (1 ½ c.) Nestle Mint flavored semi-sweet chocolate chips, divided

    1/3 c. butter, softened

    ½ c. sugar

    ¼ c. brown sugar

    1 egg

    ½ t. vanilla

    1 ¼ c. flour

    ½ t. baking soda

    ¼ c. salt

Preheat oven to 350°.  Melt ¾ c. mint chips in microwave on 50% power.  Stir until smooth.  Set aside.  In large bowl, beat butter and sugars until creamy.  Bed in melted chips, egg, and vanilla.  Gradually blend in soda, salt, and flour.  Stir in remaining mint chips.

Drop by rounded tablespoonfuls onto ungreased cookie sheets.  Bake 8-10 minutes or until cookies are puffed and tops are moist.  (Cookies will look slightly under baked.)  Let stand 5 minutes on cookie sheet.  Cool on wire rack. Makes about 1 ½ dozen cookies.

  2. Either use your minty ones to melt to make the brownie base, or use them as the chips that you stir into the batter.  Eitehr way would be nice.

    Outrageous Brownies

    1 pound unsalted butter

1 pound plus 12 ounces semisweet chocolate chips, divided

    6 ounces unsweetened chocolate

    6 extra-large eggs

    3 tablespoons instant coffee powder

    2 tablespoons real vanilla extract

    2 1/4 cups sugar

1 1/4 cups all-purpose flour, divided (1 cup for batter and 1/4 cup in the chips and nuts)

    1 tablespoon baking powder

    1 teaspoon kosher salt

    3 cups diced walnut pieces

Preheat oven to 350º F. Grease and flour a 13x18x 1½” sheet pan.

Melt together the butter, 1 pound chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.

Stir together 1 cup of the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips with 1/4 cup flour to coat. Then add to the chocolate batter. Pour into prepared pan.

Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not over-bake! Cool thoroughly, refrigerate well and cut into squares.

These would be good w/ white choc chips in them.
