Question:

What can I cook for my diabetic mother?

My mom, who was recently diagnosed with Type 2 Diabetes, is coming to stay with me for a few days next week. I love to cook and would love to cook for her but am not sure what meals I can make for her. Can anyone suggest a couple of meals that would be okay for her to eat?

  1. Low glycemic foods: sweet potatoes, whole wheat bread, w.wheat pasta,  salads with Balsamic vinegaette (balsamic vinegar, honey, dijon mustard, pinch of salt mix to taste, very good),

    Grilled chicken b*****s (this has helped me lose weight, and its delicious). Put a boneless/skinless chicken breast in a freezer bag, add balsamic vinegar, or terayaki sauce, and beat the chicken breast till it begins to losen up and spread about in the bag and grill).  It comes out so tender.  Or fry in olive oil 4 mins on each side on mid high heat, move to plate , and cover with pan lid or another plate, let sit for 5 mins. OH so good!  Put that on top of mixed greens, cut up fresh apple, grapes, strawberries, walnuts, mandarin oranges. MMM

    I love this because its filling without filling me out and I can eat the whole thing cause everything is so good for me.

    She can all of these items and eat away and lose weight too.  I am.

    We have found that balsamic vinegar is so good on apples, strawberries, chicken, fish, salads.

    We grill our chicken and fish or lightly sear in olive oil only.

    No white bread, white rice, white sugar, (use honey or Splenda) or sodas, no junk food.

    We make our own ice cream.  Quisinart makes an excellent automatic ice cream maker.  The tubes freeze in the freezer, so no added salt or churn to turn.  

    We use only evaporated milk and powdered milk.  I know sounds bad, but its really pretty good.  Really the ice cream comes out as ice milk, but thats OK. You can control how much sugar you add this way.  Its makes yogurt and sorbet too.

    Give her lots of fresh fruit and veggies to munch on during the day.  Bananas are high glycemic, so I don't recommend those.  Best fruits are mangoes, peaches, apricots, apples, bran,peas, beans, nuts, plums, oranges, grapes, lean turkey, dark chocolate with 60% cocoa.  Use only olive oil..

  2. Tbh anything, a really good thing to feed diabetics is fish, i.e cod with like a tomato sauce? Try that its rather nice :)

  3. Breakfast : Two scrambled eggs with ham, onions , green peppers and one slice of any kind of cheese.

    Fresh fruit

    Lunch:Tuna salad with loads of greens and fruits.

    Dinner :Baked sweet potatoes with toppings such as broccoli ,cottage cheese, nuts.

    Of course you can add any meat, seafood or chicken but that is up to you.

    How about tea and fresh made cookies for dessert ?

    Snacks can be : Popcorn,nuts, fruit ,veggies and yogurt.

    Have diet soda  and water for her.She may like sugar free lemon aide and coffee as well.

    don't give her any meat or sugar
