What can I do with Red Cabbage ?

Do you have tasty salad recipes that include red cabbage ? I like it when it's all crisp and crunchy, with Asian-like dressing...

I have some left over and don't wanna do a one-ingredient salad, so...

And I asked for salad recipes but any other recipe is fine :-)

  1. shred half the head of cabbage and place in large bowl.

    in another bowl combine

    1/2 C oil

    1/2 C  vinegar

    2 T sugar

    1 T salt

    1/2t pepper

    1/4 C minced onion

    pour mixture over cabbage and toss very well...place in a container with a lid and let rest 2 days....or longer..


  2. Pulled Chicken Sandwiches with Red Cabbage Slaw

    INGREDIENTS

    4 cups shredded cooked chicken

    3/4 cup ketchup

    1/3 cup prepared yellow mustard (such as French';s)

    2 Tbsp cider vinegar

    Red Cabbage Slaw

    1/2 cup buttermilk

    1 tsp sugar

    1/4 tsp each salt and pepper

    1/2 small red cabbage, cored and thinly sliced

    1 carrot, shredded

    1/3 cup sliced scallions

    6 split hamburger buns

    PREPARATION

    1. Combine chicken, ketchup, mustard and vinegar in a medium saucepan. Cover and cook over medium-low heat, stirring occasionally, until hot.

    2. Red Cabbage Slaw: Meanwhile, mix buttermilk, sugar, salt and pepper in a large bowl. Stir in remaining ingredients.

    3. Arrange open buns on plates. Mound chicken mixture on bottom halves. Top with some of the slaw; cover with bun tops. Serve remaining slaw on the side


  3. You may like this one. It's served warm, but you keep the cabbage crisp...

    ***Warm Sesame Slaw Salad***

    2 tablespoons vegetable, peanut or canola oil

    1 small head red cabbage, shredded

    Salt and freshly ground black pepper

    3 tablespoons rice wine vinegar

    3 tablespoons honey

    3 tablespoons toasted sesame seeds

    1 tablespoon sesame oil

    Heat the oil in large skillet over high heat. Stir-fry the cabbage 5 minutes then season with salt and pepper, to taste, and add vinegar and honey, sesame seeds and oil. Serve warm.


  4. Two things my Mum used to do for us were

    1. Cut into thin strips, cut some white cabbage the same way, slice onion and bacon and stir fry with a little peanut oil...

    2. Cut into thin strips and cook in a crock-pot with brown sugar, water and bacon until water and sugar form a bit of a sauce - thick but not too thick or heavy.

  5. Finely shred it and add it to coleslaw, or add coleslaw ingredients to the red cabbage.
