What can I do with all these tomatoes?

I have a ton of tomatoes. I was thinking about making some spaghetti sauce. Anyone have any good recipes? What are some other things I can use these for and freeze for the future? How do I stew them?

  1. pour boiling water over the tomatoes and take the skins off - then deseed and chop them up

    into a frying pan put garlic and onion - fry off - add the chopped tomatoes with some salt and pepper, fresh herbs and a squirt of tomato ketchup

    lovely fresh tomato sauce that can then have meatballs added to it and cooked - or poured over chicken and roasted - or just mixed with pasta


  2. to stew tomatoes,boil them and then peel the skins off or to make spaghetti sauce, you should cut up tomatoes into large chunks, and put in a large stock pot, and simmer for at least 6 hours, if you like a smooth sauce, you will have to run your tomatoes through a food processor once they are cooked and cooled.

    in a seperate pot, braise your pork shoulder, garlic, onions, olive oil, brown your meatballs, and italian sausage.add your tomatoes and ssimmer for another 6 hours

  4. Canned or frozen homemade spaghetti sauce is always great.  My mom made some last year and we loved it.  She wanted to give some away as Christmas presents and the whole family protested!  LOL!

    Just blanch the tomatoes to make peeling them easy - dip them into boiling water or pour boiling water over them for about 2 minutes.  Then dip into very cold water for 2 minutes and the peels slip right off.  Then chop them up and simmer them with salt, pepper, oregano, garlic salt and onions, peppers and mushrooms to taste.  Makes delicious spaghetti sauce that can be canned or freeze for long-term storage.

    Also, whenever we had tons of tomatoes around, my Mom would slice a bunch up, fry up some bacon or ham, make a bunch of toast and we'd have bacon & tomato sandwiches for a couple of meals. Yummy!
