What can I do with left over pork loin from the crock pot?

I'm making a pork loin in the crock pot for dinner tonight...but it's huge! There is no way between my husband, my self, and our 11 1/2 month old that we'll finish the whole thing tonight. What can I do with the left overs for dinner tomorrow night (keeping in mind that I'm a terrible cook so simple, quick, and easy is the way to go)? Thanks in advance!!!

  1. If it is fresh, just cut in half and freeze.

    Pork and apple sauce makes a good sammie

    .

    Slice and eat cold with some Piccalilli or some Corn Relish.

    Pork Fried Rice, Pork Chow Mien.  


  2. pulled pork sammys are good. I like to use half bbq sauce and half mandarin marmalade for the sauce.

    carnitas.

    pork stir fry.  Cut up pork, buy frozen stir fry mix veggies and a stir fry sauce...fry it up!

    pork, rice and veggie casserole.  cut up pork, use pre cooked rice and frozen veggie of choice....mix all together with a cheese sauce and bake till bubbly appx. 350 degrees for 20 - 30 minutes.  Or just get prepackaged cheese rice, cook and mix everything together and bake.

    Pork sloppy joes.

    Use it in a omelet.

    Mix in with boxed au gratin potatoes for potatoe and pork casserole.

    throw it in chili and serve over corn bread.

I'd be very surprised if you have many leftovers.  I cooked 2 pork loins in the crock pot for dinner last night - it's just my hubby and myself.  I really don't like pork loin, so I didn't have more than one small piece, and hubby didn't eat more than 2 or 3 pieces, but by the time I made the leftovers into lunches there was nothing left.

    Unless your pork loin is much bigger than mine were.

  4. cook until really fall apart tender and pull it apart add favorite bbq sauce and blend  makes great sandwichs

    (this works best if you have a cast iron skillet or griddle)

    shred the pork

    heat skillet/griddle with SMALL amount of oil on high until very hot

    add shredded pork and heat until just becomes a little crispy, this won't take long, lower heat,  add taco seasoning or fajita seasoning according to package directions and cook until liquid is gone.

    serve as tacos, burritos, quesedilla's, nachos, etc along with rice, beans and all the fixings for the tacos,etc.

  7. Sandwiches are a good answer, but also consider making a chili con carne with it.

  9. We like to use our leftover pork loin to make sandwiches for lunch (or dinner).  Just add some BBQ sauce or whatever you like!  You could also just freeze half of the pork loin and then you'll have a quick but good dinner one night when you're in a hurry.

    just heat bbq sauce with the shredded pork on the stovetop until hot !!

  13. get some taco or enchilada sauce, shred pork. place in premade taco shells and garnish with lettuce, cheese,avacado and onions

  14. The pulled pork ideas are great or you could shred meat and make pork tacos.
