  2. hmmm good question... if u have any shake and bake u can chop up the zucchini and make fried zucchini or u can use bread crumbs :P

  4. chope then thinly and saute them in olive oil and garlic then add other veggies like tomato or bell peppers and maybe some shrimp, a splash of white wine would be bomb too then use as a sauce for pasta or eat like that.  

  5. I mix yellow squash and zucchini together in cut up chunks. Then I add a little oil to the pan and cut up a Vidalia onion. A little salt and pepper, cook until crunchy tender. It's quite yummy! I had some for dinner tonight.

  6. Squash-Zucchini Casserole

        * 1/2 stick butter or margarine

        * 1 yellow onion, chopped

        * 3 yellow squash, medium size, sliced

        * 3 zucchini medium size, sliced

    Melt butter or margarine in a large skillet. Add chopped onion, cook for a few minutes. Then add sliced yellow squash and sliced zucchini to skillet and cover and cook until all ingredients are cooked, about 25 minutes. Drain juices and serve on a plate.

Oh wow, what wonderful veggies you have there.  You could saute them or grill them with some Olive Oil, butter, S&P, onion powder and garlic and they would be wonderful sprinkled with some Parmesan Cheese and fresh basil.  You could add them to a simple marinara sauce, baked them with some bone in chicken thighs and a light cream sauce with mushrooms and onions, you could put them in your food processor and make veggie cakes out of them and add some potato too!  You could roast them with some red onions and peppers to make a killer veggie dip, or eat them fresh out of the oven with a nice Porterhouse steak.  You could also dice them up, saute them with some Italian Seasonings and put them on top of your dinner salad with chunks of Roasted Chicken, or use them in your veggie omelette in the morning.  That's all I have time for right now, because I see the lightening outside my window and I have to sign off.  Hope this gives you some ideas today!

  9. I slice thick and grill quick, with just a bit of salt and pepper. I also make a soy/ginger vinaigrette and marinate squash and other veggies in it for about an hour. I serve it over greens with grilled chicken and chow mien noodles for a great summer salad. Lastly, I use slices for hors d'oeuvres instead of crackers or pita, topped with things like hummus and roasted peppers, salmon and herbed cream cheese, etc...good luck!

  10. Emeril's Recipe: Summer Vegetable Sauté

    2 tablespoons olive oil

    2 zucchini, sliced into 1/2 inch coins

    2 summer squash, sliced into 1/2 inch coins

    1 white onion, sliced thinly

    1 red onion, sliced thinly

    1 teaspoon crushed red pepper

    1/2 teaspoon salt

    Freshly Ground Black Pepper

    2 tablespoons freshly grated Parmesan

    1 sprig basil, for garnish



    In a large sauté pan over high heat, add olive oil. Add remaining ingredients, stirring to combine. Continue to cook for about 5 minutes, or until vegetables are just tender. Garnish with Parmesan and basil. Serve immediately.

  11. Zucchini bread with honey cinnamon butter. or just sautee the two together with evoo, garlic, and/or onions. Be sure not to over cook. And do not be afraid to cook on high heat.

  12. My mom smashes squash and mixes in melted butter and maple syrup and then bakes it in a casserole dish.
