  1. This dish is a winner...

Coat a pan in cooking spray, and preheat your oven to 350 degrees.  Chop up some onion, and cut inch and a half pieces of potatoes (red or Idaho are best).  Add them to the pan and add your favorite meat rub.  I use an adobo steak rub, it is basically a seasoned, yellow salt.  You mix that all together in the baking pan or dish, and then lay pieces of mild Italian sausage across it.  You can usually fit about 10 to 12 pieces on top, spacing them nice.  Cook them until both the sausage and potatoes are browning, and turn the sausage when necessary.

  2. All in about 45  minutes.

Big pot of Mac n cheese

chicken strips n dips(bbq sauce or ranch or hiney mustard or gravy)

    mashed potatoes

    The Mac

2lbs VELVEETA light Pasteurized Prepared Cheese Product, cut up

    2/3 cup milk 2 cups

16 oz elbow macaroni, cooked, drained

    Dash ground black pepper

MIX prepared cheese product and milk in medium saucepan; cook on low heat until smooth, stirring frequently.

STIR in macaroni and pepper. Spoon into 1-quart casserole.

BAKE at 350°F for 30 minutes.Or cook low on top of the stove covered n stir every 5 min.

    The Strips

    1 pound chicken tenders

    Salt and pepper to taste

    1 cup all-purpose flour

1 large or extra-large egg, beaten with 2 tablespoons milk

1 cup dried breadcrumbs, seasoned with salt, pepper, thyme, marjoram, garlic powder, and a little grated Parmesan cheese, all to taste

1/4 cup olive or vegetable oil (more if needed)

Pat the chicken dry with paper towels. Season lightly with salt and pepper. Dip each tender first in the flour, then the egg wash, then the breadcrumbs. Shake off excess and place on a baking or cooling rack. If time allows, chill in the refrigerator for about 30 minutes to help the coating adhere to the chicken. Heat the oil, enough to generously cover the bottom of a large skillet, over medium-high heat. Add the chicken, being certain not to crowd the pan, and brown on both sides, about 3 minutes per side. Place on cooling rack to drain. If desired, sprinkle with a little more salt. Serve immediately. These are also good warm, room temperature or cold.

    The taters

2 lbs red potatoes, peeled and quartered length-wise

    1 teaspoon salt

    1/3 cup milk

    4 Tbsp butter

    Salt and Pepper

    A potato masher or mixer

    1. Put potatoes into a saucepan. Add 1/2 teaspoon salt. Add water until potatoes are covered. Bring to boil, reduce heat and simmer, covered, 15-20 minutes, or until done - a fork can easily be poked through them.

2 Warm cream and melt butter, together, either in microwave or in a pan on the stove. Drain water from potatoes. Put hot potatoes into a bowl. Add cream and melted butter. Use potato masher to mash potatoes until well mashed. Use a strong spoon to beat further, add milk to achieve the consistency you desire.

  6. 4 large baking potatoes

    8 slices bacon

    1 cup sour cream

    1/2 cup milk

    4 tablespoons butter

    1/2 teaspoon salt

    1/2 teaspoon pepper

1 cup shredded Cheddar cheese, divided

    8 green onions, sliced, divided

    Preheat oven to 350 degrees F (175 degrees C).

Bake potatoes in preheated oven for 1 hour.

Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. 7. This is what I am having:

First I cut up baby carrots (lengthwise-kinda thin), onion, maybe green pepper, or whatever veggies you like! & some tomato.

Cook all veggies (except tomato) in olive oil & garlic, on medium just until tender. Throw the tomato's in the last minute!

In the mean time, boil water for spaghetti, or whatever pasta you have on hand.

AFter pasta is cooked, throw the veggie mix in with pasta, add more olive oil if needed. Also add salt & pepper to taste, dried oregano & basil. Then I mix in some Grated Romano or Parmesan Cheese.

Voila-easy meal in under 30 minutes!

Edit-If you don't have Olive Oil, it won't be very good!
