  6. Saute some of the zucchini and squash in the olive oil while making some rice.  When the veggies are basically done, add some of the spinach to wilt.  Serve over the rice.  Or also heat up some of the tomato sauce to add to the veggies.

  7. Make a fresh spinach salad with the spinach.

Slice the zucchini and squash and dredge it in a little seasoned flour (salt and pepper will do) and pan fry in the olive oil. Drain on paper towels and serve with a little white rice cooked with a little salt and tomato sauce in the water.  If you have some milk, fresh or canned, you can make a rice pudding with the rice and sugar.

  8. Boil 1 cup of rice in 2 cups of water, cover, turn heat low for 1/2 hour.

If spinach is fresh, you might like it as a salad with olive oil & vinegar.

Otherwise, steam it as a vegetable.

Slice zucchini & saute in some oil, then add tomato sauce.

Serve over a bed of rice, add spinach on top, sprinkle with cheese.

  9. slice the zuccini very thin, then dip it in the flour.  fry it up in the olive oil.

  10. Prepare rice. 25 min

Saute cubed squash with o/oil Itilian seasoning, salt, pepper, garlic powder untill tendrer add tomato sauce and heat till bubbly add torn spinach  serve over rice.( I hope you have some spices.)

  11. Cook your rice, dice squash and add to cooked rice. Stir in tomato sauce, and spinach with some Italian seasoning and a pinch of sugar. Heat through. Cut zucchini in half length wise. Scoop out a little of the center so you have a"boat" to stuff. Drizzle zucchini half with olive oil, Spoon rice mixture into zucchini boats and place into a baking dish, that has been sprayed or coated w/a little olive oil. Cover w/foil and bake at 350 for 30 Min's or until zucchini is tender. If you have a little cheese it would be good to put a little on top. Enjoy!

  12. Saute the spinach, zucchini, and squash  in the olive oil... add a little S&P, garlic if you have it (or garlic powder spice), and maybe a squeeze of lemon juice, if you have that.

  13. Spinach and Rice - This is VERY delicious

    1/3 cup olive oil

    2 onions, chopped

2 pounds fresh spinach, rinsed and stemmed

1 (8 ounce) can tomato sauce

    2 cups water

    1 teaspoon dried dill weed

    1 teaspoon dried parsley

    salt and pepper to taste

    1/2 cup uncooked white rice

Heat olive oil in a large skillet over medium-high heat. Saute onions in the oil until soft and translucent. Add spinach, and cook stirring for a few minutes, (here you can add your zucchini and squash too), then pour in the tomato sauce and water. Bring to a boil, and season with parsley, dill, salt and pepper. Stir in rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender. Add more water if necessary. serves 4.
