Question:

What can I make him that travels well?

My cousin is a musician. He's on the road right now (and has been for about two months), but the day after tomorrow they're passing through town...he asked me to make him something, anything. I'm a bit too tired to think, so I thought I would ask you all what I should make. It has to travel well, taste real good (he's a bit sick of junk food) and feed about 6-7 guys...and I also want it to last them a day or two. And if it helps, he loves southern food and I can make about anything so the level of difficulty doesn't matter much...just not too expensive (I can't be servin' steak or lobster, LOL). Thanks!

  1. Make a big ole mexican corn bread casserole, easy to store and easy to cut out a piece and microwave:

    MEXICAN CORNBREAD CASSEROLE  

    Cornbread Batter:

    2 cups self rising cornmeal

    1 can (10 oz) cream style corn

    2 eggs well beaten

    1/2 cup crisco oil

    2 tsp sugar (if desired)

    1 cup milk (may add more milk to make batter right)

    (not to thick or not to thin)about like cake batter

    Filling:

    1 1/2 lbs lean ground beef

    1 large onion chopped

    3 to 5 small banana peppers chopped

    2 to 3 cups grated cheddar cheese (mild or med)

    Mix together corn meal, eggs, milk, sugar, cream style corn and oil. set aside. This is your batter for the bread. In a large skillet, cook ground beef, onion and peppers until browned and then pour into strainer. Drain off any grease. Rinse with hot water and let drain.

    Pour half of batter into large greased skillet. then pour all of the hamburger mixture over this. Top this with all the cheese.

    Next, pour the other half of your cornbread batter over the meat and cheese filling.

    Bake in a 350* oven for about 45 to 50 min. or until brown. Let set a few minutes before cuting and serving.

    This makes a wonderful main dish. Serve with soup beans and enjoy.

    and some nice flapjack for pud that keeps ages.x

  3. Fried chicken. People love to eat that cold too. And some cold salads like potato and macaroni. Will last if kept in cooler.

  5. Southern huh? Well maybe a ham with some sweet potatoes.....he can pick up something to go with it, and then he can eat sandwiches off of that. Maybe the old stand by, fried chicken.  It's kind of difficult cause I guess it should be something that can be stored easily and eaten hot or cold.
