Question:

What can I make with Jalapenos?

This year in my garden i planted 4 jalapeno plants. I got TONS!!!

So I was wondering what I can make with them ( besides Jalapeno Poppers ).

If you have an idea please tell me and a recipe is very appreciated.

    Bloomin' Jalapenos



    15 to 20 large fresh jalapenos, stemmed and cut in half,

    (scoop out some of the seeds, leaving some for heat)

    2 eggs

    1/2 cup milk

    salt and pepper

    2 teaspoons Old Bay Seasoning

    2 cups flour

    Oil for frying

    Dipping Sauce (make before frying the jalapenos)

    1 large ripe avocado

    1/2 sour cream

    2 tablespoons Picante sauce

    1/4 teaspoon garlic powder

    1/4 teaspoon salt

    juice of half a lime



    Beat egg well and add milk. Put peppers in mixture, mixing to coat. Let stand in mixture about five minutes, then remove. Put salt, paper Old Bay Seasoning and flour in paper sack or 1 quart zip log bag. Shake to mix thoroughly. Drop the coated peppers, a few at a time, in the flour and close bag and shake to coat. Lay peppers inside-down on cookie sheet to dry for 15 minutes.

    Deep fry pepper slices in hot oil until brown and crisp. Drain on paper towels.

    Put dipping sauce in small deep bowl and place on plate. Arrange the fried jalapeno slices, petal fashion around the dipping sauce bowl.

    There you have it! Bloomin' Jalapenos

    Crab Stuffed Chilies 2

    1/4 pound Crab meat

    1 8 oz package cream cheese

    1 package corn muffin mix

    24 large fresh Jalapenos

    Ranch dressing

    oil for deep frying



    Remove stems and seeds from Jalapenos, blanch peppers in lightly salted water rinse and drain well.

    Blend Crab meat and cream cheese to a smooth paste, spoon into peppers and refridgerate 2-3 hours.

    Prepare corn bread mix according to package directions, adding just enough extra water to make a smooth, thick batter. Dip chilled peppers into the batter and deep fry in hot oil until lightly brown, drain on paper towels.

    Serve with Ranch dressing for dipping.



    Armadillo Eggs Recipe

    30 min | 5 min prep

    SERVES 20

    1/2 lb shredded monterey jack cheese

    1/2 lb shredded cheddar cheese

    1/2 lb hot breakfast sausage

    1 1/2 cups Bisquick

    1 egg, beaten

    1 (5 ounce) package spicy Shake-and-Bake

    20 jalapenos

    Slice the peppers in half lengthwise down one side only and scrape out the seeds. If you accidentally cut all the way through, just try to keep the two halves together.

    Mix Bisquick, sausage and cheddar in a large bowl.

    Place the beaten egg in a shallow bowl,.

    also put the Shake N Bake in a shallow bowl.

    Stuff each pepper with shredded jack, then stick the halves back together, if separated.

    Grab a handful of the sausage mixture and wrap around the pepper in the shape of an elongated egg.

    Dip in beaten egg and roll in Shake N Bake to coat evenly.

    Place on a greased baking sheet. When the peppers are all ready, bake at 350F for 25 minutes or till crisp.

    This recipe for Armadillo Eggs serves/makes 20.

    CAUTION! IF USING HABENAROS, USE OWN DISCRETION AS TO PEPPER PROPORTIONS. Maybe make some jalapeno and some habenaros.

    Be sure to de seed peppers accordingly depending on your tolerance for oral agony




  3. I like them chopped and fried with eggs for breakfast.

    You could make salsa and can it.

    You could slice them and can them for pizza as someone suggested.

    I'd BET they'd be ok if you chopped them in a food processor and put a bit of lime juice and maybe olive oil and froze them in ice cube trays then put in a bag in the freezer to pull out at will.  I am speculating as I have not tried it.

    If you don't like the heat, remove the seeds and spines.

  4. Perhaps this: 8 large jalapenos

    1 pkg cream cheese

    1 cup cheddar cheese

    dash of garlic powder

    dash of salt

    hickory smoked bacon

    Split jalapenos in half length wise and remove the seeds. Mix Cream Cheese and Cheddar together adding spices.

    Stuff peppers generously and place in baking dish. Cover peppers with generous slice of bacon.

    Bake at 450 till bacon is crisp.

  6. JALAPENO CHEESE BREAD

    2 1/2 teaspoons yeast

    3 cups bread flour

    1/2 teaspoon salt

    1 tablespoon sugar

    2 tablespoons butter

    1 cup milk

    1 cup grated Monterey Jack, Cheddar, or Parmesan

    1 tablespoon fresh chopped or dry minced onion

    2 tablespoons jalapeno pepper, seeded and finely chopped

    Process in bread machine on dough cycle. When dough cycle completes, remove dough from machine and roll out thinly on a lightly floured surface to make a rectangle.

    Sprinkle with grated cheese, onion, and jalapeno pepper. Roll up jelly-roll style, place in a greased and floured loaf pan and bake at 350F degrees, about 45 minutes or until crust is golden and bottom of loaf sounds hollow when tapped.

    ALAPENO BACON FABULOSOS

    2 lb. jalapenos

    2 8 oz. pkg. cream cheese

    2 pkg. bacon or turkey bacon

    Pre-heat oven to 400F.

    Seed and remove end from jalapenos. Be sure to remove all of the seeds!

    Cut large jalapenos in half. Stuff with cream cheese.

    Wrap each jalapeno with a 1/2 slice bacon.

    Lay in dish with end-of-wrap side down.

    Bake for 30 min to 1 hr depending on desired degree of doneness. I like them crispy.

    As they cook, pour off grease.

    HUMMUS WITH ROASTED JALAPENO

    1 can chickpeas/garbanzo beans

    2 tablespoons tahini (sesame butter)

    2 tablespoons plain yogurt

    2 garlic cloves

    2 tablespoons olive oil

    lemon juice (half a lemon)

    1 jalapeno pepper (fresh) or 2 for hot hummus

    salt and pepper to taste

    Split the jalapeno down the middle and discard the seeds unless you want to make HOT hummus. Wash your fingers and hands well after handling the hot peppers and keep them away from lips/eyes for the remainder of the day (or use rubber gloves).

    Roast (optional) the jalapeno on your gas grill or burner. To roast, place peppers on the grill at 350F for 4-5 minutes per side. (Or peppers may be used as-is).

    Combine all the ingredients in a food processor or blender and blend for a couple minutes until smooth.

    JALAPENO GRILLED CHICKEN SANDWICHES

    1/4 cup jalapeno jelly

    4 boneless skinless chicken b*****s

    1/4 cup apple cider vinegar

    1/2 teaspoon salt

    1/2 teaspoon Tabasco sauce

    4 hamburger buns

    Melt jelly in microwave-safe bowl, stir; add apple cider vinegar, salt and Tabasco sauce. Heat one minute on high; stir well. Grill or broil chicken b*****s 5 to 6 minutes per side, basting often with jelly and vinegar mixture.

    Serve on buns with lettuce and tomato garnish.

    Makes 4 sandwiches.

    JALAPENO PEPPER JELLY

    3 large green bell peppers, seeded, diced

    5-7 jalapeno peppers, seeded, diced

    1/3 cup water

    5 lbs. sugar

    3 cups cider vinegar

    3 pkgs (3 oz.) Certo

    few drops green food coloring (optional)

    Have ready 8-10 hot sterilized canning jars.

    Tip: Clean blender before starting by processing 1/4 cup vinegar for 1 minute; discard vinegar.

    Using a scrupulously clean blender, process peppers with water until smooth.

    Note: Wear gloves when handling hot peppers and keep hands away from eyes.

    In a large saucepan, combine pepper mixture, 1 5 lb. bag of granulated white sugar and 3 cups of vinegar. Stir together to dissolve sugar. Boil for 4 minutes, watching carefully (mixture boils over easily).

    Remove from heat and stir in Certo and food coloring (if using). Stir well until all is combined.

    Pour into hot sterilized jars. Seal and process in boiling water bath for 10 minutes.
