What can I make with applewood smoked cheddar cheese?

I really like the cheese, but I'm not sure what to do with it, other than eat it as-is and make grilled cheese.

What else can I do?

Also - it has to be vegetarian.

  1. Casserole with some type of veggie. Green beans, zucchini, or broccoli work best for me.

    You could make a dip for tortilla chips...

    Put it in an omelet.

    Maybe combine it with some shredded sharp cheddar and toast on top of crusty bread in the broiler?  or add it to macaroni and cheese, or add some to herbed muffin mix or cornbread muffins...sliced with Granny Smith apples..shredded on top of tomato soup

  4. add it to salsa and cooked red kidney beans. equal parts shredded cheese, kidney beans and salsa. Add chili powder to taste

    put in in the microwave for 1-2 minutes

    Serve with warm tortillas.

  5. I think it would be good with Broccoli/Cauliflower Cheese, or any dish that has cheese. Vegetarian Lasagna, or Macaroni.

  6. Lightly coat a zucchini steak with olive oil. Add salt, pepper, garlic, basil and cilantro. Fry in skillet for about 60 seconds on each side or until golden. Apply a layer of applewood cheddar and slide skillet in oven and broil for 60 seconds or until cheese melts and begins to brown.

    Enjoy!
