What can I make with chicken cordon blue for my wedding dinner?

I'm doing a small wedding and I don't have much money to spend so I'm making the wedding dinner. I know what the main dish is (chicken cordon blue) but i don't know what else to cook. I want it to seem like Fancy like i cooked all day on it. PLEASE help me I only have like 7 weeks until my wedding day. THANKS!!

  1. buttered noodles, rolls and salad.


  2. To make it fancy, serve it with a white and wild rice mix (you can even use the Uncle Ben's mix and then use whole green beans with toasted pecans on top.  You can buy whole green beans in the fresh food section or the freezer section.  Cook the green beans until JUST tender.

    TO toast the pecans:  take one cup of pecan halves, and toss with two tablespoons melted butter. (You may need more than one cup depending onthe number of guests.) Then bake at 375 for 5 minutes.  Start watching carefully and toast until dark brown and fragrant.  You can do this a day in advance.  Leave at room temperature before you put on top of green beans to serve.

  3. Mixed fresh steamed veggies and roasted potatoes with parsley, and nice dinner rolls.

  4. Corn, Cresent rolls or biscuits

  5. How about rice?

    You could make rice pilaf. For coloring add carrots, chopped red, green, and yellow peppers, and then some cilantro or parsley.

    Make a large kettle of Potatoes O'Brien.

    You can purchase big bags of frozen vegetables, and then steam cook them.

    You can always purchase dinner rolls, or you could make garlic cheese biscuits.

    How about fruit cocktail?

    Or you could also bake apples, core them, and fill them with corn syrup, brown sugar, cinnamon, or the hot cinnamon candies.

  7. here is a recipe for vegetable bundles which look really nice on a plate.  you could make it with just green beans and carrot and that would be very nice and budget friendly.

    a wild rice pilaf with spinache (use frozen)  and diced red pepper for colour, which is also cost effective.

    penne or rotini pasta in a white sauce with vegetables such as zucchini and carrot with parsley and basil

    it's important to spend a little time planning your plating and decide your garnish.  it's great also to have extra sauce to dress the chicken on the plate.

  8. Sauteed Baby Artichokes:

    Ingredients

    2 pounds baby artichokes

    Bowl of water with 3 cups of water and juice from 2 fresh lemons (about 3 Tbsp) or equivalent amount of vinegar

    1 cup of water

    1/2 cup olive oil

    1 medium yellow onion, chopped

    2 green onions (scallions), chopped, including the green ends

    3 cloves garlic, minced

    1 Tbsp lemon juice or balsamic vinegar

    1 pinch of Herbes de Provence

    1/2 teaspoon salt

    Dash pepper

    Freshly grated Parmesan cheese (1/4 to 1/2 cup to taste)

    Method



    1.Rinse the baby artichokes. Set out a bowl with 3 cups of ice-cold water; add the fresh squeezed juice from 2 lemons (about 3 Tbsp of lemon juice) or vinegar. Working on the artichokes one by one, cut off the stem to 1/4-inch from the base; peel back and remove the petals until only the top third of the cone tip is pale green green. Cut off the pale green tips. Trim off any remaining green from base of artichoke. Halve or quarter the artichokes, depending on their size and drop in the bowl of acidified water (to prevent discoloration).

    2. Drain artichokes. In a large skillet, heat the artichokes and 1 cup of water to boiling. Cover and simmer 3-5 minutes, depending on the size of the artichokes. Drain well.

    3. Using the same skillet, heat to medium high and add the olive oil. Add the artichokes, onions, garlic, and herbes de Provence. Cook for five minutes, stirring occasionally. Sprinkle on 1 Tbsp lemon juice or vinegar, salt and pepper. Put in serving bowl, sprinkle freshly grated Parmesan cheese on top.

    Serves 4.

    Roasted Potatoes:

    Use a blend of quartered sweet-potato, golden, red, and Idaho potatoes. Place on a cookie sheet and drizzle lightly with canola oil. Spice with coarse sea salt and cracked pepper. Toss until coated and roast at 400 degrees for 20 minutes.

    I personally hate the taste of asparagus but it makes a beautiful presentation.

    You can do a pasta instead of rice pilaf if your chicken will be extra creamy.

  10. do some whipped potatoes and put them in a extra large frosting bag with extra large tip. then be creative pipping them out.

  11. asparagus.

    get fresh asparagus, cut ends off and wash.

    you can put them into a 9X13 pan.

    pour olive oil onto asparagus in the pan.

    set aside.

    take red onions and gut into small strips

    place into pan.

    take whole button top mushrooms and de-stem

    cut into quarters place in pan.

    lightly turn all ingrediants over and mix in 9X13 pan.

    add a bit more olive oil.

    salt and peppar to taste

    and 4 whole diced cloves of garlic into pan.

    add two sticks of soften butter that has been sliced up ontop of all the veggies.

    cover with aluminum foil and bake in over at 400 degrees for approx 30-45 minutes.

    also you could do rustic smashed potatoes as well.

    take red potatoes and boil them just like you would for regular mashed but leave the skin on. you can add any type of seasonings that you want. also dont forget to add sour cream as it helps smooth out the mashed potatoes and adds a richness to them as well.
