    *CORN TORTILLA PIE

    1 lb. extra lean ground beef or ground turkey

    2 lg. onions, chopped

    1 (8 oz.) can tomato sauce (no salt)

    1 (16 oz.) jar thick and chunky salsa

    1 tsp. ground cumin

    1 tsp. chili powder

    1 (17 oz.) can creamed corn (no salt)

    10-16 oz. frozen corn (thawed slightly)

    12 corn tortillas, cut into 1 inch strips

    1/2 c. grated, part skim Mozzarella cheese

    1/2 c. grated, low fat Cheddar cheese

    Preheat oven to 350 degrees. Spray a large skillet with nonstick vegetable spray. Brown meat with onion. Add tomato and salsa sauces, cumin, chili and garlic powders, and corn. Mix well.

    Spray a 9x12 inch pan with nonstick vegetable spray. Layer mixture with tortillas, starting with one fourth of meat mixture and topping with one third of the tortilla strips. Continue layering, ending with the meat mixture. Cover and bake for 35-40 minutes or until thoroughly heated. Add cheese and cook another 5 minutes

    *Shrimp Tacos

    1 tablespoon extra virgin olive oil

    1 teaspoon chipotle pepper

    1 teaspoon salt

    1 lb shrimp (medium, about 20), peeled and deveined

    8 corn tortillas

    2 avocados, diced

    1/2 bunch of cilantro, coarsely chopped

    2 limes, cut into wedges

    Mix the olive oil, chipotle pepper, and salt in a large bowl. Add the shrimp and toss to coat.Heat a stovetop or outdoor grill to medium-high. Grill the shrimp until translucent, about 1 ½ to 2 minutes on each side.In a separate pan, grill tortillas until slightly charred and pliable, about 20 seconds per side. Alternatively, wrap in damp paper towel and heat in a microwave.Assemble the tacos by taking the tortilla and filling it with shrimp. Top with cilantro, avocado, and lime juice. Salt to taste.

    *Sloppy Joes in Soft Corn Tortillas

    4 white corn tortillas

    1 pound ground beef or ground turkey

    1 can sloppy-joe sauce (such as Hunt's) or 1 package sloppy-joe

    1 cup shredded sharp Cheddar

    Preheat oven to 300°F. Wrap all the tortillas tightly together in foil and place in oven for 5 minutes. In a medium skillet, brown the beef or turkey. Add the sloppy-joe sauce (or seasoning, tomato paste, and water, according to the label directions). Place 1 tortilla on each plate. Spoon the sloppy-joe mixture evenly onto each tortilla. Divide the Cheddar evenly among the tortillas and fold them over. Serve with a green salad.

    *Migas with Tortillas

    4 large eggs

    1 T. water

    2 T. chunky salsa

    1 T. butter

    1 T. oil

    2 6 inch corn tortillas cut into strips

    1/4 C. finely chopped onion

    2 T. green chilies

    1 medium tomato seeded and chopped

    1/2 C. chopped avocados (optional)

    2 t. fresh chopped cilantro

    2/3 C. grated Monterey cheese

    sour cream

    In a small bowl combine the eggs, water and salsa. Set aside.Warm the butter and oil in a skillet. Add the tortilla pieces and saute until softened. Add the onion and saute until transparent. Stir in the chopped green chilies.Pour the egg mixture into the skillet. Scramble the eggs until done. Remove the skillet from the heat and stir in the avocado, tomato, cilantro and cheese, stirring well.Serve at once with warm corn tortillas. Garnish with sour cream and additional salsa.

  5. You can make taquitos. I make this roast and with the leftover beef  I add jalapeno jack cheese strips. I put it inside a corn tortilla and fry until crisp. Serve with guacamole, salsa, and sour cream. To make the guacamole take a couple ripe avocados, mashed. Add a little lemon juice, 1 tsp packaged taco mix, a little tobasco, 1 tb sour cream and mix together. This roast can be made in the oven in a roasting pan. Just cut the time in half and bake at 350F.

    Savory Roast Beef

    3-4 lb roast

    1 can cream of mushroom soup

    3 tb steak sauce (optional)

    1 can water

    1 package dried Lipton onion soup mix

    Place roast in crock pot. Add steak sauce to top and spread to coat evenly. Add cream of mushroom soup on top spreading to coat. Sprinkle onion soup on top and add water. Cook on low for about 8-10 hours or until meat separates easily. Serves 4.

    For French Beef dip sandwiches: French Rolls, roast beef, and Au Jus Mix with a little of the drippings from the roast added for dipping. Horseradish Sauce if you like it.

    Coat with olive oil - add chicken/steak/BBQ pork (already cooked) and shredded cheese

    wrap tight/roll up and bake at 350 for 15/20mins.

    Also - you can use a muffin pan - put tortillas in stuff with fav. meat or vegs or whatever and fold edges over - put toothpick in to hold and bake at 350 again for 15 mins.

    You can also make a mexican salad, toast in oven and crumble over salad for a nice crunch.


  9. cut them into fourths and fry them in a skillet, they make good chips for chip and dip.

  10. corn tortillas are healthier that flour ones.  you can use them in many ways, the only thing is, they must be cooked (unlike the flour ones)  

    Soooo...I like to add some sauteed veggies and rice all spiced up with taco seasonings and chz (or cooked shredded meats or shrimp if you like)  then fold into the tortillas.  Brush them with olive oil, or spray olive oil on them, and then bake them till crispy and chz melts.  about 400 for 10 mins or so.

    Another awesomly easy and impressive option--cut them into quarters or sixes, like pie slice shapes, and deep fry them to make chips!  then just make some homemade guac and pico for a party!  they are sooo good hot and thick yum.

    Make crunchy taco shells by frying them in deep oil and hold them with tongs, folded in 1/2.

    Use them in fish tacos. Use a basic white fih. Make up a spicy seasoning and coat the fish in the seasoning, then cook. Split the fish in 1/2 lengthwise and serve with shredded cabbage, tomatoes, olives, salsa, and a sauce made up of cilantro, jalapeno, mayo, and sour cream.
