What can I pack for lunch that's vegetarian?

I just became vegetarian over the summer, and now that school is about to start, I'm not sure what I can pack for lunch that is healthy & vegetarian.

  3. Here's a vegetarian sandwich spread that's really yummy.  It's kinda like potted meat sandwiches, but it's 100% vegetarian.  I personally like it.  Doesn't hurt to give it a try. :-)

  7. A very healthy option would be to make a quinoa and veggie mix that you could eat cold out of the fridge from work or heat it up in the microwave. Quinoa is a grain that is a great substitute for the regular rice or cous cous option. It is super good for you, mild, fluffy, and has sort of a nutty flavor. I personally like lightly sauteing onions, bell pepper, green beans, and snow peas ...I just always make sure they remain a bit crispy and fresh because I really like the contrast of textures. You could add any veggies that you love so have fun with it. As always make sure to season with salt and pepper and I even add some crushed red pepper for some extra kick. So that it isn't so dry you could add some roasted garlic vinaigrette which is totally yummy!
