I just made some awesome brown rice patties with onion, carrot, peas, hoisin sauce, raw egg and breadcrumbs to bind it. I want to serve it to friends on friday night. What can i accompany it with? Did a websearch and blackbeans and salsa was suggested but that doesn't appeal to me. Any Ideas?

    8 zucchini, peeled and chopped

    1 eggplant, peeled and diced

    8 carrots, diced

    16 cherry tomatoes

    2 red onions, sliced

    1 red bell pepper, sliced

    1 yellow bell pepper, sliced

    8 tablespoons olive oil

    1 teaspoon dried rosemary

    1 teaspoon dried thyme

    2 bay leaves, crushed

    1 teaspoon dried oregano

    2 cloves garlic, minced

    2 tablespoons fresh lemon juice

    1 teaspoon grated lemon zest

    salt and pepper to taste

In a large bowl mix the zucchini, carrots, eggplant, carrots, tomatoes, onions and peppers with the oil, rosemary, thyme, bay leaves, oregano, garlic, lemon juice, lemon zest, salt and pepper. Cover and chill for at least 2 hours, and preferably overnight.

    Preheat oven to 400 degrees F (200 degrees C).

On a large roasting pan, roast the vegetables, uncovered, for 20 minutes, or until the tomatoes have split and the edges of some of the vegetables are starting to crisp.

Remove from the oven and stir before returning to the oven for another 20 minutes. At this time reduce heat to 200 degrees F (95 degrees C) and continue cooking until vegetables are tender, turning every 20 minutes.

    3/4 cup peanut butter

    19 ice cream sandwiches

1 (12 ounce) container frozen whipped topping, thawed

    1 cup salted peanuts

Pour the chocolate syrup into a medium microwave safe bowl and microwave 2 minutes on high. Do not allow to boil. Stir peanut butter into hot chocolate until smooth. Allow to cool to room temperature.

Line the bottom of a 9x13 inch dish with a layer of ice cream sandwiches. Spread half the whipped topping over the sandwiches. Spoon half the chocolate mixture over that.

Top with half the peanuts. Repeat layers. Freeze until firm, 1 hour. Cut into squares to serve.

  6. I would suggest a curry, perhaps pork, and the sauce not so strong in taste, as it may overpower the taste of the patties.

The heat of the curry is up to your taste.

  7. try to go to a local farmers market or if your grocery store has good produce get it there and get what ever is in season veggie wise, what  ever you like get a good mix of 4 or 5 things, cut them into strips and stir fry in toasted sesame oil  and add a bit of soy sauce and crushed red pepper you can serve it on the side or on top of your patties

  8. Broccoli, salad (spinach), Black beans are good though. You should go with that. But I'm Not sure about the salsa.

    Congratulations on the rice patties
