my grocery store tends to have horrible avacados. Basically all rotten. What can I use instead in a simple california roll.

  1. Mangoes work wonders in a simple california maki. They add a bit of a sweet oomph :)

  2. Mangoes are a great idea, but I'd also try something like heart of palm, which you'll find either canned or in jars in the olive / pickle aisle at the grocery store.  I often substitute these for avocados in a salad.

  3. Cucumbers are a good substitute for avocados in most sushi, though it does take away the "creamy" effect. Perhaps you could try spreading a little guacamole instead since it already comes prepared and the avocado taste is essentially still there.

  4. papayas are good.  Sometimes the Japanese will use dikon.

  5. find a Mexican grocery and buy Mexican Hass avocados from Michoacan, they cost from $2 to $3 each but you will see the difference, they are enormous and have a softer meat than puny California and Chilean Avocados. they are good when the skin is black, not green,  and they are little tender to the touch, but not squishy.

  6. Mangoes, Dragonfruit and kiwis! They serve sushi topped with thee fruits all the time, especially in Japanese fusion restaurants : ]

  7. use mangoes instead.

  8. Cucumbers. Unfortunately, it's almost impossible to make a true California roll without avocados.
