Question:

What can I substitute for the bacon in a Traditional German Beef Goulash (Rindergulash) recipe?

My recipe calls for a 1/4 lb of bacon, I don't want to alter the consistency and flavour if possible, and I know bacon is quite distinctive. I am allergic to pork; I have some authentic German taste buds I'll be cooking for - so I need a reconciliation in the recipe! Thanx!

  1. To get the smoky flavor you'll be looking for from the bacon, try liquid smoke. Be very careful, this stuff is very concentrated. Trying to replace the actual pork flavor might be very difficult. You may just want to cook it for the "Authentic German taste buds", but not eat it yourself. Have a friend do the tasting for you and/or try to add the pork as late in the recipe as possible. Good luck!

  2. If pork is a problem, I'd get some of that turkey bacon.  It has the same bacon-y flavor, without the pork.  Or maybe a little bit of corned beef from a can.  That would give it that cured flavor that ham or bacon has.

  3. Bacon Bits are fake Bacon I do believe. Just add enough to get the flavor.
