well i want something with eggs in it and something easy but filling

  4. Egg Custard Soup (Chawan Mushi)

    Ingredients:

    10 eggs (*Makes 10 cups)

    1.2L water (100ml hot water to dissolve hondashi, sugar, salt & msg)

    10g hondashi (bonito)

    5g sugar

    5g salt

    1/2 tsp ajinomoto (msg)

    30cc shoyu (light soy sauce)

    60cc mirin (vinegared wine)

    30cc sake (rice wine)

    Preparation:

    Beat eggs and ingredients to mix well in a tub. This can be kept in a plastic bottle for 2 - 3 days in the chiller. Remember to shake it well before use.

    In each cup your choice of:

    Chicken meat (Do not use pork as it requires longer cooking), prawn or scallops, crab meat or fish.

    Sliced shiitake (black/brown mushroom) or button mushroom (dry or fresh).

    Method:

    Put contents into the cups and pour in your egg mix. Remove  bubbles with a teaspoon and cover cups with a lid or aluminium foil.

    Line the inside of a steamer of boiling water with a tea towel. Put the cups  in the steamer and wrap the ends of the tea towel over the top. (This 'softens' the steam and stops condensation that forms on the lid of the steamer falling back into the soup, that is the secret.) Steam over low heat for about 8 - 10 minutes, then check if cooked. They may need an extra 5-10 minutes. If the heat is too high, the soup becomes very 'tough' and bubbly, the texture should be light and wobbly.

    The method above is for small tea cup servings, you can use a large bowl to hold 3 or 4 (jumbo) servings if you want to. Get your supplies from the oriental food section. If you're using bonito as a substitude, boil it (about 25g) & strain out the flakes & cool to use.

    You can eat this on it's own or as a compliment to some other food... Spice it up with some chopped chilli & spring onion if you like, it goes well with steamed rice!

Egg Fu Yung is great for lunch or dinner.  Here is a basic highly rated recipe, but keep in mind this recipe is very versatile (although you do need the bean sprouts and the water chestnuts give it a wonderful crunch.)  You can substitute other veggies you have on hand and even add baby shrimp, cooked crab meat etc.

    SERVES 2 -4

    6 eggs, beaten until very thick

    1/4 cup chopped green onions

    1/4 cup chopped or sliced water chestnuts

    1 cup bean sprouts

    1 teaspoon soy sauce

    salt and pepper

    1/2 cup meat, if desired

    Sauce

    2 tablespoons cornstarch

    1/4 cup cold water

    2 cups beef broth

    2 tablespoons soy sauce

    Beat eggs until very thick and then blend in green onions, water chestnuts, bean sprouts, 1 teaspoon soy sauce, salt and pepper, and meat of choice if desired.

    Pour 1 soup ladle full onto an oiled skillet. (cook like a patty)

    Brown on both sides.

    Serve with sauce on top.

    For sauce, make a paste of the cornstarch and water.

    Then stir in beef stock and 2 tablespoons soy sauce.

    Cool until clear and thick.

  12. The best accompaniments to eggs are sharp flavors, to cut through the too-filling and rather fat laden texture of eggs, no matter how cooked. Salmon caviar on points of toast is good. If you don't want to be so fancy, tomato wedges with salt and parsley also works. It helps to have something for visual appeal that contrasts to the yellow-white of eggs.

  13. Egg Salad Sandwich

    Dice up some green chile's and put it in your eggs with cheese. That is really good. I made that the other day. You could just scramble it all together, except sprinkle the cheese on top. Or make an omelet out of it.

    Eggs with Fruit and Toast on the side is good.

    Bacon, Eggs, Potato burritos.

    This morning I scrambled eggs, put it on sliced bread with mayo, and sliced cheese and made a sandwich out of it. It was really good.
