World issues are those affecting our whole world.  Some of them are:

air pollution

pollution of the seas

a shortage of energy (oil and natural gas)

global warming

weak economies on all continents

slavery (yes, it still exists... even here in the US)

As for what to do to make them a project, that would depend on the level you are reaching.  In high school, a simple report of facts gleaned from the library and the internet would do.  At higher levels, conveying your understanding of how these factors affect all nations and what is being done about them would be required.
