  1. http://www.cooksrecipes.com/category/gme...  has many ground meat recipies.  If you are worried about bacteria contamination because of the expiration date, don't be.  If the meat has been frozen the entire time it is safe to thaw (use the defrost on the microwave,) as long as you do not let it set and cook it right away.  The problem with making a recipe using frozen meat is the water issue after it begins to thaw.

  2. Get you r skillet out and defrost it on a low temp in the skillet. turn it often.  Make something like chili, turkey helper( hamburger helper), sloppy joes, etc...

  3. GROUND TURKEY ENCHILADAS

    1 1/2 lbs ground turkey

1 pkg frozen spinach - thawed and drained

    2 cups salsa

    1 can diced tomatoes

    1 pkg flour tortillas

    2 cups Mexican blend cheese

1 8 oz. block cream cheese

    ground cumin to taste

Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.

Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.

Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.

Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

    GROUND TURKEY AND VEGETABLES

    1 lb. ground turkey

1 1/2 bags (16 oz. each) frozen vegetable mix (broccoli, carrots, cauliflower)

    1/2 bell pepper, chopped coarsely

1 cooking spoon (not quite full) of olive oil or vegetable oil

2 chopped basil leaves or sprinkle of dry basil to taste

    1 lg. onion, chopped coarsely

1 (8 oz.) can tomato sauce

1/4 c. water (you may want more)

    1 bay leaf (lg. green)

A generous sprinkle of garlic powder and Italian seasoning or seasoning of your choice

Saute onion and turkey in oil and about half the water on low heat until the turkey starts to brown (just a few minutes). Then add rest of ingredients, mixing well to distribute tomato sauce evenly. Cover and simmer on low heat 12-15 minutes, stirring occasionally.

Tips: Sometimes I skip the saute and put all ingredients in the pan at once. This can be made minus the meat, as a vegetable course, or you can substitute shrimp or deboned chicken. Can be made ahead and frozen.

hope this helped and good luck :)

  4. Put it in the microwave to thaw it out.  It only takes a few minutes.

  5. If that happens to me I just fry it off breaking it up as it defrosts then add water.

You can just boil it if you wish, but it tends to be lumpy.

  6. thaw in the microwave on the "thaw" button... does a nice job, then you can do with it whatever you were going to do with it.

  7. Aside from using a microwave to thaw your meat, you can also speed up the thawing process by simply placing the meat in a frying pan or on any metal surface at room temperature.  The metal conducts the heat from the room more quickly than if you left the meat on a plate or a wooden cutting board.  Just make sure you remove it from its packaging so that it's in direct contact with the metal.
