  2. Healthy Cake

    Eat-The-Whole-Cake Cake

This cocoa-flavored dessert for special diets is made with sweet rice flour and gluten-free flour blend, and is flavored with vanilla.

    Ingredients3/4 sweet rice flour

    3/4 gluten-free flour blend

    1/2 cup unsweetened cocoa powder

    3/4 cane sugar

    1/3 cup oil

    1 cup water

    1 TBS vanilla extract

    3/4 teaspoon sea salt

    1 TBS baking powder

    Method

Preheat oven to 350F. Spoon flours into measuring cup, level off. Add cocoa powder to flour. Stir in sugar, oil, water, vanilla, salt and baking powder. Pour into oiled 8x8" glass baking dish. Bake for 30-35 minutes. Frost with butter cream frosting or sprinkle with powdered sugar for fast brownies!

Notes: Frost with vegan butter-cream frosting, or just dust with powdered sugar for fast, super-moist brownies. Sweet rice flour can be found in the Asian section of the grocery store.

  4. That stuff is very bitter.  You have to add a lot of sugar to make it edible.  So, not sure how healthy any of it would be.

I came across a recipe a few months ago that was brownies made out of cocoa powder and, of all things, chick peas.  Umm, never had the desire to try that one.  LOL!

  5. you can make pudding or chocolate milk.

  6. bake a cake or make brownies! I always use cocoa powder, the result is the best....check out recipes from Hershey/Nestle's anything....but, you have to make the recipes from scratch----everyone will love you & beg for more! lol

  7. Google cocoa recipes.  You'll get a lot of recipes.

I don't have my recipe or I can't seem to find it, but there's a cocoa applesauce cake that's pretty good and healthy as far as cake goes.

Here's my all time favorite brownie recipe

    Chewy Cocoa Brownies

    1 2/3 cups granulated sugar

3/4 cup butter or margarine, melted

    2 tablespoons water

    2 large eggs

    2 teaspoons vanilla extract

    1 1/3 cups all-purpose flour

    3/4 cup cocoa

    1/2 teaspoon baking powder

    1/4 teaspoon salt

    3/4 cup chopped nuts (optional)

    powdered sugar

    1. PREHEAT oven to 350° F.

    2. Grease 13 x 9-inch baking pan.

    3. COMBINE sugar, butter and water in large bowl.

    4. Stir in eggs and vanilla extract.

    5. Combine flour, cocoa, baking powder and salt in medium bowl; stir into sugar mixture.

    6. Stir in nuts.

    7. Spread into prepared baking pan.

    8. BAKE for 20 to 25 minutes or until wooden pick inserted in center comes out slightly sticky.

    9. Cool completely in pan on wire rack.

    10. Sprinkle with powdered sugar.

    11. Cut into bars.

Terri's note:  I dissolve 2 teaspoons instant coffee in the water.

    This is entirely optional.

  8. Chocolate Pudding Cake

This makes a nice cake layer that magically floats atop a layer of warm, fudge pudding!

    3/4 cup granulated sugar

    1 cup plain flour

    1/4 teaspoon salt

    2 teaspoons of baking powder

    2 Tablespoons cocoa

    ½ cup milk

    1 teaspoon of vanilla

    3 Tablespoons melted, cooled, margarine

Sift sugar, flour, salt, baking powder and cocoa together in bowl. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x13” dish).

    TOPPING:

    ½ cup of granulated sugar

    ½ cup brown sugar

    1/4 cup cocoa

Mix topping sugars and cocoa together and sprinkle dry ingredients over batter. Pour 1 ½ cups of tap water over all. DO NOT STIR.

Place in oven and bake at 350ºF for 45 minutes or until topping is done. (In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom.)

Serve in bowls with spoons. Serves 6-8 people. Good with vanilla ice cream or cool whip.
