  1. Cod is a great fish.  It has so many options.  It is usually the fish used in fish and chips, beer batter it, grill it with salt and pepper, add a slice of lemon for flavor.

  2. I recommend kalabass's answer, with one modification--skip the parmesan, and use panko bread crumbs instead.

Add a little bit of (like 2 teaspoon) of lemon juice into the scrambled egg mixture.

  3. try the steam pouch method, cut your fillet into portions, then cut some aluminum foil into squares big enough to wrap around the fish, place the fish into the middle of a square, add salt/ pepper/ oil / some slices of citrus and a small splash of white wine, then make a pouch out of the foil and bake 350 for about 10-15 mins depending on thickness you could add any of your favorite aromatics or spices to this its awesome

  4. I have this simple recipe:

Take your cod fillet, season well.

    1. Coat with flour.

    2. dip in scrambled egg

    3. For every 1 cup bread crumbs, add 1/2 cup parmesan cheese grated. Coat well and fry until golden brown.

great with tartare sauce or any mayo-based sauce. Serve with fries or pasta.

Edit: the parmesan cheese would make a huge difference. I'm telling you. It's goooood.

fish and chips is great too.

    BASIL BAKED COD FILLETS

    Serves 2

1/2 lb. cod, haddock, or orange roughy fillet

    1 tsp. olive oil

    1 tsp. lemon juice

    1/4 tsp. dried basil, crushed

    1/8 tsp. black pepper

    Dash salt

2 plum tomatoes, cored and cut crosswise into thin slices

    2 tsp. grated Parmesan cheese

Pat fish dry and cut into 2 serving pieces. Combine oil and lemon juice in a baking dish. Add fish and turn to coat both sides. Sprinkle with basil, pepper and salt. Overlap tomatoes in even layer on fish and sprinkle with Parmesan cheese. Cover with foil and bake at 400 degrees, about 10 to 15 minutes or until fish just begins to flake when tested with a fork.

  5. Get some corn flour, add some dried mixed herbs, dried garlic, dried ginger, salt and pepper - mix it all together, then coat the fish in it and then once the fish is coated, beat an egg white, dip it in egg white and then pan fry - serve with steamed vegetables and rice.  Mmmmmmm...
