What can i make for a dinner to accomodate all these people??

Okay. So next Saturday I'm having my mom and dad, my sister, her husband, their 4 year old, and my mom's mom and dad over for my mom's birthday. my mommom and poppop have cholesterol problems, and don't usually eat stuff with mayo, or a lot of fat or anything obviously. what can i make to accommodate this mix of people? i was originally planning on a taco bar or something, but my grandparents can't eat that. and pasta is obviously out.

not too complicated, include recipes please!!

i know it's not a huge # of people (8 total) but with the 4 year old and the cholesterol free- grand parents, it complicates things. thanks so much!!

BBQ chicken would be great ... or oven "fry" some boneless, skinless chicken b*****s (use olive oil - it actually helps to lower cholesterol) ....  A big green salad with choice of dressings ... steamed veggies;  a fruit salad (hollow out half a watermelon and refill with cubed melon,berries & pineapple)  ...  Have baked potatoes or sweet potatoes, for those that want them ..... Angel Food cake with Cool Whip and sliced strawberries for dessert - or Hagen Daz fruit sorbet

    Corn tortillas

    skinless,boneless breast of chicken, cooked & shredded

    homemade pico de gallo

    fresh lime

    avacado slices

    Mexican cheese blend

    sour cream

    grill or bake the corn tortillas until almost crisp (practice with one first)

    then top with chicken (sometimes we buy a grocery store roaster & shred the meat from it), sprinkle with cheese & grill or bake till cheese is melted

    top with pico de gallo, little squeeze of lime juice, avacado slices, & sour cream if you prefer

    sometimes we take a pizza cutter & cut them to make easier to eat

    definitely finger food & messy

    can be very low cholesterol with decreased amounts of cheese & sour cream or completely stripped for the youngest generation

    serve with limeade, lemonade, margaritas (my fav) & enjoy

    you will also be surprised how a little of this fills you

I like to make "Charlie Boyz" for a crowd.  They are a simple loose meat.  Brown 2lbs of lean ground beef and put it in a crock pot.  Add a diced onion if you wish, about 1/2 cup cream of wheat, a couple T garlic salt and ground black pepper to taste.  Let it cook on low for a couple of hours and add water if it is looking dry.  You can serve on buns with pickles and condiments or as meat in nachos...very versatile.

    Charlie Boyz, veggie platter, some tortilla chips and fresh pico de gallo or salsa, a salad or two and some fresh fruit salad or angel food cake-strawberry shortcake?

  4. If you wanted the tacos you could make refried beans or black beans with some flavor for your grandparents.  Or you could get ground chicken or turkey and use that instead of ground beef.  It is not as fatty as ground beef.  

  5. 8-PEOPLE OVERNIGHT BRUNCH CASSEROLE

    1 lb. bulk sausage

    6 eggs

    2 c. milk

    6 slices white bread, cubed

    1 tsp. salt

    1 tbsp. dry mustard

    1 c. grated cheese

    Brown sausage, drain, crumble into large bowl. Beat eggs and add milk, bread cubes, salt and mustard. Stir before adding cheese and sausage. Spoon into 8x12 inch glass dish. It must be covered and refrigerated overnight. Bake from refrigerator into oven 45 minutes in 250 degree oven.Cook this in a 300 degree oven. Recipe can be doubled.

    RATATOULILLE FOR 8 PEOPLE

    1/2 lb. eggplant

    1/2 lb. zucchini

    1/2 lb. thinly sliced onion

    2 sliced green peppers

    2 cloves garlic

    Olive oil

    1 1/2 c. tomatoes

    Saute onions, garlic, green peppers, zucchini, eggplant until softened. Add tomatoes and cook until eggplant is soft. Add parsley and basil.

    CHOLESTEROL FREE GARDEN VEGETABLE STEW

    Brown 1 large onion in vegetable oil in heavy skillet. Add 1 pound ground turkey, or ground chuck and cook until brown. Add 2 cups of water and let mixture simmer for 2 minutes, then drain and pat dry with paper towel. Discard water. Return meat and onions to skillet. Add:

    1 can carrots

    1 can tomatoes, or four frozen tomatoes, or four fresh peeled ones

    1 c. cooked potatoes

    1 c. okra (can be fresh, frozen or canned)

    1 lg. green pepper, chopped

    CHOLESTEROL-FREE CASSEROLE

    1/2 tsp. butter

    1/2 c. brown rice, cooked

    7-8 yellow squash

    1 (8 oz.) can cream style corn

    2 tbsp. French fried onions, crumbled

    Rub butter on bottom of a 2-quart baking dish. Add rice. Parboil squash, cut in slices. Place squash over rice. Pour cream-style corn over squash. Place French fired onions on top. Bake at 325 degrees for 30 minutes.

    NOTE: For a variation, replace the corn with 1 pint of whole canned tomatoes, omitting the French fried onions, or use fresh sweet onions on top.

    CHOLESTEROL-FREE CHICKEN

    Chicken cutlets or skinned drumsticks

    4 tbsp. honey

    4 tbsp. brown mustard

    Dry bread crumbs

    Mix honey and mustard together. Baste chicken with above mixture. Dip in bread crumbs and arrange in baking pan. Bake at 350 degrees for 40 to 50 minutes.  Easy and delicious!

    LOW CHOLESTEROL CHICKEN DURANGO

    Bake chicken b*****s, with skin removed, for 30 minutes topped with no-fat, no-cholesterol Miracle Whip at 350 degrees.

    4 chicken b*****s, cooked, boned and shredded

    1 med. onion, chopped

    1/2 c. butter

    2 (10 1/2 oz.) cans undiluted cream of chicken soup

    2 (10 1/2 oz.) cans undiluted cream of mushroom soup

    1 (10 oz.) can tomatoes and chilies, slice tomatoes in can, use with juices

    1 (6-8 oz.) pkg. corn or flour tortillas (Tostitos restaurant style work great)

    3 c. Sargento's taco cheese

    Lg. deep pan or Dutch oven

    13 x 9 x 2 inch baking dish or pan

    (NOTE: Volume gets quite high with 5 cans of ingredients).

    1. Preheat oven to 350 degrees.

    2. Saute onions in butter until tender.

    3. Add soups, tomatoes and chilies - stir and cook until smooth.

    4. Layer 1/2 of the tortillas in bottom of 13 x 9 x 2 inch baking dish or pan. Layer 1/2 of chicken on tortillas shells. Layer 1/2 of sauce on chicken. Layer 1/2 of cheese on sauce. Repeat layers in the same order.

    5. Bake uncovered in 350 degree oven for 25 minutes.

    Makes 6-8 servings.

    LOW CHOLESTEROL TUNA OR CRAB QUICHE

    1 (6 oz.) white tuna, drained (or crab)

    1 c. formagg cheese

    3 oz. low fat cottage cheese

    1/4 c. grated onion

    1/2 c. chopped green olives with pimiento

    1 c. Bisquick

    2 c. lactaid milk

    1 c. (4 eggs equiv.) Second Nature Eggs + 1 egg white

    Dash salt (+ or -)

    Dash nutmeg

    Low fat, low cholesterol, no lactose recipe.

    Mix first 5 ingredients put in greased quiche pan or 10" pie plate. Mix last 5 ingredients. Beat well. Pour over mixture in dish. Bake 35 to 40 minutes until knife comes out clean. Let stand 5 minutes before serving. Serves 6 to 10.

    Formagg cheese tastes like cheddar, comes grated and has no cholesterol - no lactose.

    NO CHOLESTEROL CHOCOLATE CREAM PIE/LOW

    FAT

    2/3 c. sugar

    4 tbsp. cornstarch

    1/2 tsp. salt

    8 tbsp. Hershey's cocoa

    2 c. skim milk

    3/4 c. Eggbeaters

    2 tbsp. butter

    2 tbsp. vanilla

    In top of double boiler, combine first 4 ingredients. Add 2 cups of skim milk. Stir over boiling water until thickened. Remove from heat. Pour half of hot mixture into Eggbeaters. Return to rest of hot mixture after mixing. Cook again over boiling water until thick. Remove from heat. Add vanilla and butter. Cool slightly, then pour into precooked pie crust. Can be topped with meringue or crushed walnuts.

    NO CHOLESTEROL PIE CRUST:

    1 3/4 c. flour

    1/2 c. safflower oil

    3 tbsp. cold water

    1/2 tsp. salt

    Combine flour and salt. Add oil, mix together. Add 3 tablespoons of water, blending well. Roll out between wax paper. Makes double crust 9-inch pie. For unfilled pie shell, prebake at 450 degrees until light brown, 10 to 15 minutes.
